My most looked-forward-to appetizer at any casual party is pigs in a blanket. I expect to see them at least three times a year—Christmas Eve, New Year’s Eve and whatever Super Bowl party I attend. If they’re missing, I’ll have something to say about it. These petite bites blend sweet, buttery, wrapped-in-a-pressurized-cardboard-canister dough and a salty, smokey cocktail weenie in one dip-able morsel. Also, you can roll up about 40 of them for under $10, making them perfect for guests and hosts alike. It’s hard to improve on something flawless, so instead, I’d like to offer you a few new spins for your classic little piggies.
Scallion Pain d’Epi-tizer This is a stylistic love-child of French pain d’epin (wheat stalk bread) and Asian scallion hot dog buns, boasting all the flavor of our American sausage sweetheart. The shape of this bun is perfect to tear apart and dunk in the nearest sauce or, if you have a big heart, share with someone who’s worth it. The key to an appealing wheat stalk shape is to slice your dough-wrapped dog at an angle.

1 lb ground beef
1 lb HOT ground Sausage
1 lb Velvetta
Garlic Powder
Oregano
Salt
Little Rye Bread Squres
Cook beef and sausage in pan, drain grease. Add spices, mix through, add cut squares of velvetta in pieces and let it all melt. When ready top the small rye bread squares with a decent amount of hanky panky and place on baking sheet in 350 oven for 8 minutes. Till bubbly.
We use the little rye bread to make mini pizzas at Christmas. And G’pa makes them so they are even more impressive!

I met a guy that had pineapple ring-related PTSD from his childhood, so I made some pigs-in-a-blanket with pineapple rings around a sausage in a blanket. Just did it as a joke, but they were quite tasty.

There is also a gluten free Bisquick which is very handy when you are just starting the gluten free thing.

I have not used Bisquick in a couple of decades.
I didn’t know that they had a gluten free option.
Basic Recipe
Ingredients
4 cups finely ground white rice flour
1/4 cup granulated sugar
3 tablespoons baking powder
2 teaspoons salt
2 teaspoon xanthan gum
1 cup solid vegetable shortening
Pulse in food processor until combined.
You can substitute butter for shortening but then you need to store it in the refrigerator.
If you use unprocessed coconut oil it is shelf stable for about eight weeks.
If you leave out the sugar it does not brown the same so it looks rather anemic.
