Few ingredients inspire as much fear as MSG, or monosodium glutamate. While an overtly chemical name and a similarity in appearance to salt certainly don’t help its case, the food additive is especially reviled because some people believe that consuming it causes a slew of symptoms, from headache to palpitations to numbness.
But is MSG actually bad for you? Monosodium glutamate has a terrible rap due to decades of anecdotal reports and xenophobia—but it’s probably nowhere near as detrimental to your health as you think. Here’s everything you need to know about the misunderstood ingredient, according to experts.
What is MSG?
Monosodium glutamate is a food additive that enhances the savory flavor in food. In technical terms, MSG is the sodium salt of the common amino acid glutamic acid, per the Food and Drug Administration (FDA). It takes the form of a white, crystalline powder. Importantly, MSG tastes really good—it can deepen flavor and make food taste more like itself, much like salt does.
You can find MSG at almost any supermarket in America, but it’s far more popular in Eastern Asia. The ingredient was first discovered by Japanese chemist and professor Kikunae Ikeda, who extracted it from dashi broth in 1908 and almost immediately began selling it, the FDA explains.G, too.

Anecdotes become more convincing when you witness them. It doesn’t bother me, I have known women who turn very red when exposed, even unknowingly.

A friend always gets extreme leg pains whenever food has MSG in it.
In small doses it’s fine, but I feel VERY strange if I eat too much of it.
Too much being the amount in one of those pot noodle soups.
It’s certainly bad for ME! I can’t consume more than the merest trace without getting wicked, lasting pain in my neck. So bad some days that I’d miss work. Doctors spent years trying to fix me. Insurance paid chiropractors enough to buy a new Lambo. I eventually found out on my own. Ten years on and I’m pain free because I’ve rigorously avoided MSG.
Enough with the propaganda already.
I bet you are on to something. I know my son can eat a little gluten, but I made homemade bread and he ate a lot and felt bad. Probably same with MSG. Don’t OD on it. You can get too much of any thing.
If you get migraines it’s a major problem.
Anecdotal: Chest tightness and a resting heart rate over 100. I know when a restaurant is lying to me.
I always thought it was one of those things that was okay in small to moderate amounts for most people. It seemed to make you feel full before you had really eaten all that much. I’m sure that was a trope or something.

dry mouth, runny nose, increased sweating.
Anecdotal. Add a migraine and that’s my experience. Confirmed by specific diet, and eat same food with some MSG added. Two days plus to clear. Incapacitated , yet other people eating same meal thinks it’s an act and you’re crazy.
Avoidance works for me.
MSG is not harmless for many people. I have had very bad reactions to this substance. I have had horrific hives and also anaphylactic reactions to MSG. The bad thing is you never know where you are going to encounter the substance. I have had to carry an Epi-Pen and ID for years.
There are some people that ingesting MSG causes them issues.
I get violent, ripping headaches after eating food that has a lot of MSG in it.
Seriously, MSG totally prevents me from being able to fall asleep. Any of the artificial sweeteners ending in "OL" (Xylitol, Sorbitol, etc) don't help either, but MSG is BAD news for bed time.
I eat what I want. I’m not going to live forever, so why eat things I don’t want
