Shepherds tend their flock no matter the temperature and no matter the weather. That’s why shepherd’s huts used to dot the landscape in areas where sheep were herded. Sheep have heavy wool to protect them from the weather, but the shepherd usually bedded down in a small cabin. Those huts were either built on the edge of each grazing field, or they were on wheels and moved from field to field. The hut not only kept the shepherd out of the elements but it is also where medicine for the animals was stored. A sick or injured animal would often sleep in the hut with the shepherd.
So, that is not even a real argument.
A friend of mine leads pilgrimages to Bethlehem at Christmastime. He says there are always shepherds and their sheep in the fields at that time. That’s why they have thick wool. And there’s lots of caves around to shelter the sheep in too, if need be.

Another more difficult method of figuring out when Jesus was born is to go back to Luke 1:5 and see that Zacharias was in the Temple on the "course" of Abijah. That is the 8th course according to 1Chron 24:10.
You have to realize that ALL priests will be in the Temple on Passover, Pentecost, and Tabernacles. All the rest of the weeks will rotate between the rest of the priests. Knowing Elizabeth got pregnant when her husband came home from service at the Temple, we know John the Baptist was born on Passover and Jesus was born 6 months later which would be on Tabernacles. Tabernacles is always around Sept./Oct. and never later.
There is no Biblical Feast day marked later than Tabernacles.
Dec 25th comes from the supposed BD of Tammuz, the supposed son of Nimrod, the originator of the Babylonian religion. The Roman church stopped observation of the Leviticus Feast Days in 325 AD at the Council of Nicaea along with changing the 4th Commandment to observe Sunday and ditch the Sabbath. They then observed Tammuz's BD and feast of Ishtar became Easter. Ezekiel 8 calls these days an abomination. Every year since the same conversations come up about "we can't know when Jesus was born" and it was to cold in December for sheep to be out. All the info is there if you just read the Scriptures. If nothing else just Google "Christmas" and read.

To those who are genuinely born-from-above, we are not worshiping a date.
We are ecstatic that Jesus came to earth to provide for our redemption.

The fulfilment of Messiahship required that the Messiah be born during a “set time” referred to by the Jews as a feast.
Jesus was indeed the Messiah as he was born and died during the prophesied “set times”. Jesus was born in the fall not at this time of the year which coincides with the “shortest” day of the year.
What is the temp in Bethlehem when the Woman is clothed by the sun and the moon is under her feet?
I ask because the scriptures hint the woman was pregnant,and about to deliver, the manchild ,who was caught up to heaven, at that time.
There is an actual sign in the heavens.
Happens in early fall nowadays above everyone’s head.
And a couple thousand years ago, that same woman would have the sun clothing her in late summer and early fall.
The bible and His Creation actually speaks to His Birth.
And when one follows it, the pattern that unfolds is really why it says The Word Became Flesh..
December could have been a good guess for His Conception, though.
But the world would miss December 25,January 1 and February 2nd as holy days..
And that can’t happen this side of the Kingdom

40 days before Anna was fasting and praying night and day (Israel was taught to afflict themselves that day- 10th day of 7th month)
The Savior was born.
On an appointment He taught Israel.

And interestingly, the same 40 days hinted at when He fasted in the wilderness after being Baptized.
Baptized exactly on His 30th birthday. Wouldnt surprise us.
Then began His ministry on the same Day of Atonement, 30 years later.
And 3 1/2 later, entered Jerusalem Triumphantly to die for our sins as the Passover Lamb, Unleavened Bread and First Fruits of those who have fallen asleep.
Wait till Israel learns all this!
Then people will say who cares what shepherds are doing in December.
The Savior was born nowhere near there.
According to scripture and His Creation as the authority.
But the church would be hard pressed to abandon December 25.
So would the merchants of the world
