The bacteria for the fermentation comes from the raw honey.

Interesting. I thought honey was antibacterial.

Most cranberry wines are grape wines flavored with cranberries. I’ve enjoyed a real cranberry wine from Oregon a few years ago and it was delightful!

Better yet put some garlic cloves in some honey and let it set for a few weeks.
Great on pizza crust.

Do you have to store it in the fridge while it’s fermenting?

I stick to the mundane spaghetti sauce. I use 1 can tomato sauce, 1 can diced tomatoes, 1 can whole berry cranberries to 2.5 lbs of meat. The sauce will ‘turn’ at some point, can’t describe the taste difference but it turns into a sweet-sour that just gets better each time it is re-heated.

I’d rather eat under-ripe persimmons.

(Made your mouth pucker, did it not? ;-)

Seriously, I’m very fond of craisins. Also like any kind of pastry with cranberries in it.

Aside from cranberry sauce, I use them to make Cran-Apple Pie or Cran Apple crisp.

Cheap cranberries at Aldi’s for $1.33/# (12oz @.99). Costco has better ones @3.99/2#.

I cut up some apple and add half that weight in cranberries. Microwave until hot. Add some cinnamon and pecans or walnuts. Maybe some yogurt, flax, bran, and/or coconut.

You can also bake strawberrys!

200 degree oven, remove cores, place in cupcake tins upright to keep the juice inside, bake 30 min. Even bittersweet strawberries will taste like candy

Ok I’ll try anything once (WITHIN REASON!). This recipe is a hot mess. Recommend layering. A few cranberries, some honey. Repeat till full. I followed directions and packed the jar full of cranberries and now the honey is sitting on top and it will take days before it will ooze to the bottom of the jar. I tried warming the honey a smidge, but don’t want to risk getting it too hot and ruining the process. It may take til Christmas to pack the jar. Just sayin’
