I was planning on growing shiitake mushrooms again next Spring but I can’t find how much ergothioneine they have vs oyster. Most ergothioneine supplements seem to be made from both oyster and shiitake.

All our little grocery stores have is white button or bella for fresh. Oyster and shiitake available in jars but are a product of china. Downside of living in the boonies.

Looks like I need to feed cooked shiitake to our meat goats.

Can anyone interpret the dosing recommendations? I don’t think I’m smart enough to figure it out. I tried but now I’m confused.
You need to take quite a bit more if your COVID-19 shows your O2 is poor (using an oximeter) or you have pneumonia.
It says you could take 600 mg a day as a preventative, but it's not needed, so keep it until you think you are infected.

Highest is Oyster, then Lion's Mane & then Shiitake but all three are decent. Monday I'll be doing some shopping in Salem where our best selection for groceries is. Maybe I'll find some oyster/shiitake mushrooms.
I'll definitely be growing some mushrooms next Spring, oyster and shiitake. Oysters produce the first year but shiitake take a couple of years. I'm in humid Missouri now and have a deep, shady gully on the property and plenty of trees I need to cut down on the higher, flatter areas to convert it to pasture for the meat goats. Kunekune pasture pigs too as soon as I get a breeding pair. I've grown shiitake on logs once already and oyster will grow on logs as well. All the locals hunt for Sorrel mushrooms here which grow wild as do many inedible fungi.
Might try growing Lion's Mane too which can also grow on logs. The Lion's Mane are supposed to taste like lobster and I grew up eating lobster in MA. My dad was a lobsterman before my time and since he knew other lobstermen, he got a good deal on them.
Consider going to Asian food stores, especially Korean, for fresh shiitake and oyster.

I’m rural MO. Closest Asian food store would be St Louis, 200 mile round trip.
I’ll find out next week if they have oyster in the third closest town to us, 50mi round trip.(closest two are 40mi) I go there once every week or two. IIRC they have oyster at walmart but maybe not all the time.
Found today that there’s a mushroom farm another 20 miles South of there. Farm pickup orders will start again next Wed with pickup Fri. $12/lb fresh for most anything and they grow all three, oyster, shiitake and lion’s mane. Dried is $7/oz and supposed to be equiv to 7oz fresh. I have a dehydrator though. Maybe I’ll go to the farm once and grab 1lb each of all three as fresh and go from there.
Lion’s Mane does amazing things for me (extract). Presumably as a result of it supplying nerve growth factor.

The authors have guidance as to the amount of NAC best to use per stage of COVID-19. Look at the graphic on the last page. I would suggest not taking NAC all the time as a preventative, as it can interfere with a few useful processes, but it definitely appears useful under any believed COVID-19 infection state.
