Not to stray too far from the Nacho...
Does anyone have a goto tamale?
Not ground beef. Machaca!
The best nachos I ever had were back in the 80’s:
Naugles “Macho Nachos.”
“I never had anchovies for years. “

Love, love, LOVE anchovies.
We have a place down here where we can get thin-styled pizza by the slice.
I will place an order for a single slice with anchovies and a second slice of their veggie topped pizza. A wonderful meal!
You’ve got to have a frozen margarita with salt to sip along with it!
Crazy.

The Irish Coffee may not have been “invented,” but it was certainly popularized and achieved international recognition at the Shannon Airport during the days of the early trans-Atlantic clipper flights. Passengers crossing the ocean from Newfoundland would be greeted at the airport with a hot coffee with a dash of whisky.
The lady who does my nails is from south Mexico and she makes the best! They are wrapped in banana leaves not corn husks.
Odd to celebrate Nacho’s innovation while in the same article slamming all other culinary innovations.
It has been my experience with anchovies that using them in recipes in discreet amounts can have very cool results, but too much...ack!
Same with Thai fish sauce. That is some of the nastiest stuff, smells like you wiped your butt and missed, and if you add too much to a dish, it probably tastes that way too! But if you add it in the right amount...it can really make a Thai dish pop.
Good nachos are great and mediocre nachos are still pretty dang good. I don’t recall *ever* seeing a plate of nachos go unfinished.
Since then, to us, a Caesar Salad isn't a Caesar Salad without anchovy in the dressing.
You can just buy the anchovie paste, I prefer the whole anchovies, but when making a Caesar for others, I use the paste.
