While on a road trip with the fam to the east coast, on the list of things to do in Philly was visit Valley Forge, tour the Mint, Liberty Bell, and Independence Hall, and eat at Geno’s and Pat’s King of Steaks.
When you get up to the window, order it like a boss.
“Cheese wit”; cheesesteak with onions.
“Cheese wit out”; cheesesteak without onions.
Husband was from that area - before he moved to California.
Spent the rest of his life trying to find a decent Philly Cheesesteak.
Went to his grave never having accomplished that goal..
Whenever I am out of town or out of the country for and extended period of time and I fly out of Philly I always hit an authentic cheesesteak joint on the drive home
I’ve been eating cheese steaks for sixty years. I worked in the “Northern Liberties” section of philly every summer in the late seventies. There were dozens of sandwich shops, and every one of them had glorious steaks (and hoagies).
Only queers and tourists put cheese whiz or american cheese on a cheese steak.
The onions and other toppings have to be grilled with the meat, not thrown on afterwards.
A cheese steak is not sloppy. You can eat it with one hand, without anything falling out.
The steaks and hoagies they sell today are a mess, don’t taste good, and are way over priced.

For a moment I thought this read “National Cheesecake Day”.
Somehow, I’m slightly disappointed.
But not as disappointed as I was with the “Cheese Whiz” style of cheesesteak sammich. Sometimes ‘authentic’ isn’t better.
For those stuck in Michigan, Jersey Mike’s makes an acceptable cheesesteak. In a bun or in a bowl.
Don’t bother with Penn Station. I don’t know what they are calling “steak,” but it doesn’t look or taste like meat.
Also for those in Michigan, Tubby’s makes a great non-Philly style plain old steak and cheese sub on their homemade buns. Get it with double meat and Tubby’s sauce. Been going their for 40 years, long before I ever heard of a Philly-style cheesesteak.
I like mine spiced up with yellow banana peppers chopped in.
