Am I missing something or have others noticed how there is less of certain food items and other products in stores? High end stores seemed to be better stocked but prices have certainly gone up. Even local restaurants and chain fast food places are skimping on the old family recipes. Is there a shortage going on? I only ask because if there already is a shortage a couple days of trucks not delivering could cause some real problems in the cities.

It would cause panic and food shortages immediately. We as a society take food availability, and many other things, for granted.
Even China is now dependent upon our food production. It is a currency more valuable than gold and oil.

I have been seeing missing items on store shelves for some time. The items usually get restocked a few days later, then something else goes missing. That used to be quite rare. It is commonplace now.
The variety of items has also decreased. There are fewer sized containers and some brands have simply disappeared.
Prices appear to be about the same. In fact I am seeing temporary price reductions in some areas ("On Sale - buy Now)". My impression is that prices ran up and containers got smaller over the summer. Perhaps it is normal correction.
An interruption deliveries would cause all of these observations to explode to serious problems within 24 hours. But I am not seeing any sign of that yet.
If something does interrupt truckers, I doubt that it will come from any sort of strike. I would look for quarantine actions from a State Governor which escalate to retaliatory shutdowns of interstate traffic by other States.
In theory, the New Mexico Governor has authorized forcible quarantine for travelers from other States who transit through New Mexico without certification of negative COVID-19 test results. As far as I know, they have not actually tried to enforce such an order, nor do they have any facilities to carry out such actions.
But that is the sort of damned-fool thing that only an overbearing Government is capable of doing, that would be guaranteed to cause a major problem.

A trucker's strike would indeed very powerful. But I doubt that there will be one. There aren't any well-funded and organized groups that could coordinate and sustain such an action. The people currently involved are already backing down.
Be careful what you wish for. You might actually get it.
I expect that if a Biden/Harris administration is installed, they will eventually order lock downs that stop food deliveries - to red-state holdouts. They may even back a phony "trucker's strike" for this purpose. That would be very painful very fast, to the opponents of the regime.
Deadly weapons can always work in both directions.
