Cucumbers? I haven’t seen a cucumber in the supermarket for years. Might as well be damp rice cakes.

So much good food is no more.

This is one of the cRaZiEsT recipes I’ve ever seen - it’s also super delicious! Who in the heck would think hard-boiled eggs would make a pudding? It’s considered a protein pudding, but it’s more like a chocolate mousse. I heard about this recipe from Maria’s husband Craig Emmerich who was being interviewed on a podcast - this is one of her most popular recipes in all of her books (& yes, my ‘pudding’ looked like the picture)!

Ingredients are 10 hard-boiled eggs, coconut milk, liquid or powdered sweetener, unsweetened cocoa powder, vanilla, cinnamon, salt.

Some notes from when I made it:
Unless you have a really good blender (food processors won’t give you the same texture), chop your eggs up into pieces. I put in all the ingredients (except the eggs) & gave it a whirl, then added in the eggs a bit at a time & blended until smooth before adding more. This kept my blender from binding up.

It did taste “eggy” right after it was made, but after being refrigerated overnight, you tasted no egg or coconut. You’d have a hard time guessing the ingredients.

I would suggest reading the comments after the recipe - lots of good ideas, like this one for making your eggs:

An oldie but a goodie I make with cucumbers - slice and add to dressing of sour cream, garlic and fresh chopped dill, salt and pepper. Chill for at least an hour.

Love that salad! I leave out the green pepper, but otherwise, mines about the same. I really love the version that leaves out the oil, too.

I’ve made many versions of crab cakes, but this is the one we seem to like the best. Finishing them off in the oven adds a great texture.

I just love summer salads! This marinated tomato salad is fabulous, and I usually use about half the oil called for.

Ingredients
3 Tablespoons Fresh Parsley, Chopped
2 Tablespoons Fresh Basil, Chopped
1 Tablespoon Granulated Sugar
1-½ teaspoon Garlic Salt
1-½ teaspoon Seasoned Salt
¾ teaspoons Dried Thyme
½ teaspoons Ground Black Pepper
¾ cups Canola Oil
½ cups Red Wine Vinegar
3 whole Scallions, Sliced
6 whole Tomatoes, Cut Into Wedges

Preparation Instructions
Whisk together all the ingredients except the tomato wedges. Add the tomatoes and toss to coat. Allow to marinate at room temperature for a couple of hours, stirring every now and then. Serve with lots of bread to soak up all the yummy marinade. Enjoy!

My favorite summer pasta salad has the following:
Mini penne, olive oil, diced red onions, diced tomatoes, sliced cubanella peppers, arugula and salt to taste.

I wish I had some arugula right now because i’ve been craving it. Maybe next time I go to the store.

Diana's Summer Pasta Salad Recipe:

Prepare one 16 oz. box of tri-colored corkscrew pasta. Rinse and cool. Core, seed and chop up two paste tomatoes. Chop up one sweet red bell pepper. Use about 3/4 of a can of medium black olives, halved, and half a brick of Sharp White Cheddar, cut into small chunks. Chop up one medium green or yellow zucchini. Use 1 bottle of your favorite Italian Dressing (16 oz.) , a number of good shakes of Italian Seasoning and 1 Tbsp. Poppy Seed. Keep in the fridge, covered, but let sit out for a while before serving. (I think the flavors are better when it's at room temperature.) You're Welcome!

Just made it through a Chinese drama series “The Sleuth of the Ming Dynasty” by not sleeping for TWO nights and napping in the day. It’s from Jackie Chan, though he’s not in it, and only moderately action. What it has, amazingly enough, is everyone cooking Chinese food with closeups of the chopping and cooking. Expressions of caring revolve around food. I LOVE THIS SHOW!
