Monthly Cooking Thread - April 2020

When we were in the local Lidl last week, the meat counters were practically wiped out – especially the chicken. But if you’ve got chick, this from Food Wishes looks like a great, fast-to-put-together recipe:

As I’m sure many have been, over the past weeks of teleworking I’ve experienced periods of furious (and frustrating) work; and many slow hours where nothing was happening or could be done.

The oddball things that one becomes interested in, while sitting at home with hours to fill, are fascinating. I happened to find some posts to YouTube about ‘Kennedy Steve’, an air traffic controller with a humorous and droll approach to his job. I was intrigued by the language used in that profession, and by what it really takes to DO a job like this. The subject has filled hours for me over the past weeks – and I’ve never even traveled on a plane, and probably never will.

There are people like this, doing essential jobs every day, whom we depend upon; and we usually never know their names or anything about what they do.

I hope that everyone remains healthy and safe, while we work through this difficult time.

All interesting stuff.

I’m surprised yeast can be frozen... that’s a gift. How long beyond the manufacturers ‘use by’ date can yeast be kept in the freezer without losing it’s effectiveness? Thanks greeneyes.

Vintage candy recipe uses cond/milk. Utterly delicious--like an old-time Salted Nut Roll.
Easy, but you will need a jar of dry-roasted peanuts, a bag of mini-mallows and p/b chips.

GRANDMA'S SALTED NUT ROLLS

METHOD Pour 1/2 jar dry roasted peanuts in sprayed 8x10 pan.
Cover w/ Topping. Press rest peanuts in gently. Chill. Cut in squares.

TOPPING Melt bag peanut/butter chips, three tb butter. Add can condensed
milk, tsp vanilla. Micro 2 min/stir smooth. Add bag mini marshmallows.

The site you mention, FOOD WISHES, led onto an exploration of several other interesting sites. This one was found should any ever be given a Friendship Bread Starter in the future.

I had a coworker who used to do her bacon in the oven, and sprinkled with a little garlic powder. It was always very good.

Your bacon is perfect w/ Ina's recipe for a Parisian breakfast.

CROQUE MONSIEUR /

ING (makes 2 sandwiches) 4 slices Pullman loaf, Virginia baked ham, 1 1/2 c Gruyere/Parm, Dijon.

METHOD layer on sheetpan, oven-toasted slices Pullman bread.
Spread w/ Dijon, add ham slice, Gruyere, 2nd toasted bread slice then cheese sauce,
more Gruyere; bake 5 min. Broil lightly/topping bubbly.

SERVE topped W/ sunny side egg; greenery on the side.

CHEESE SAUCE whisk on low 2 tb ea melted butter/flour, adding hot milk; cook/thicken;
offheat, add s/p/pinch nutmeg, 1/2 c grated Gruyere, 1 1/2 c Parm.

Something strange about eggs is that they taste very different according to the way they are cooked. I adore poached egg on toast; and with your embellishments to the toast, that would make a lovely meal.

A no bake dessert. In isolation, get creative and use your favorite flavors in the freezer.
Kids will love help making this cake----lots of opportunities for tasting and finger-licking.
The dark chocolate sauce is the best excuse to make this ice cream cake.

Coffee Almond Ice Cream Cake

ING CRUST Mix 11/2 cups fine-ground chocolate grahams, ½ stick melted butter.
CAKE 11/2 pints coffee ice cream, 11/2 c chilled h/cream, tsp vanilla, 11/2 cups crushed amaretti or almond biscotti ½ cup sliced almonds, toasted
Dark Chocolate Almond Sauce 11/2 cups heavy cream 2/3 C firmly packed dark brown sugar 5 oz semi sweet or dark chocolate ½ stick butter 3-4 TBSP amaretto or tsp almond extract

PREP Pat crumb/butter mixture onto bottom, 1“ up side of a lightly oiled 8” springform, 2 1/2“ deep. Freeze firm 30 min.

ASSEMBLY Soften coffee ice cream in lge bowl then gently whisk smooth. Spread evenly over crust. Freezer firm 30 min. Spread whipped cream mixture evenly over the ice cream. Smooth top, sprinkle with toasted almonds. Freeze firm. Now, saran and foil over; freeze at least 4-24 hours.

WHIPPED TOPPING elec/mixer cream with vanilla to stiff peaks. Fold in chopped amaretti or biscotti.

SAUCE BTB combined cream/brown sugar, stir til sugar is dissolved, mixture is smooth. Offheat add chocolate, whisking to combine. Add butter and amaretto or almond extract; whisk smooth. Let cool. NOTE: keeps for weeks in fridge. Warm slightly to liquefy before serving over cake.

SERVE Just before serving, wrap warm dish towel around sides then unmold cake onto server.
Cut wedges with knife dipped in hot water; drizzle with chocolate sauce.
Serve warm sauce in pitcher on the side.

I made us BLT’s last night and tried the cooking bacon in the oven trick. It works!!! No spattered grease all over the stove and kitchen, either. I used a large sheet pan lined with foil and placed the bacon on a rack inside the pan. Baked at 400 for about 25 to 30 minutes and it was perfectly crispy - just how we like it. Clean up was a breeze, too. I don’t plan to fry bacon on the stove top ever again.

It’s been my experience and observation that communicating through the written word on the Internet seems to involve and engage different ‘brain-parts’ than usual writing or even off-line typing does.

I haven’t figured it out, but people seem to inadvertently confuse homophones when transferring them to written language online - words that they would never confuse when writing through other written means.

It may have some correlation with the difference between attention ability when one is talking to someone who is actually in the car with them, as opposed to talking on a cellphone while driving - they require different types of brain function.
