Guy living on my own right now. Thanksgiving Dinner? Trader Joe’s Turkey and Stuffing en Croute. Includes gravy and cranberry sauce. Yum. Plus Costco Scalloped Potatoes - eeeeyumeeee - and I’m not cooking all day.

Candied sweet potatoes with marshmallow topping!

One of my favorite recipes is a ‘Sweet Potato Souffle’ that my Aunt used to make - with marshmallow topping:
Sweet Potato Souffle
Prepare 2 cups of mashed sweet potatoes:
Boil potatoes in their skins until done; remove skins and mash.
Preheat oven to 350.
Scald: 1 C. milk
Add:
½ C. sugar
1 tsp. salt
3 T. butter
1 tsp. nutmeg
and the potatoes. Beat until fluffy.
Separate 2 eggs. Beat yolks and add to the potato mixture.
Add: ½ C. raisins, and stir in well.
Beat the 2 egg whites until stiff, and fold into 1st. mixture.
Pour into greased baking dish.
Bake at 350 for 50 to 60 minutes, or until knife comes out clean. When done, top with marshmallows and brown briefly under broiler.
(Usually I make the potatoes the night before, and dont bother separating the eggs.)

Next year I will keep my lettuce under cover and I think it will be fine for Thanksgiving. Fresh picked lettuce is such a treat. Trying to grow it hydroponically now.
We’re in an apartment, and have tried growing on the balcony, but it’s just too hot. We’ve got one of those ‘Aerogarden’ thingies, but have so far only tried herbs. I’ve been wondering how it might work with lettuces.

I'm doing this in Mason jars in a closed off bedroom at about 65 degrees.....just for fun...but it's working.
‘Snowflakes’ need to grow up.
For the first time in 45 years I am not cooking Thanksgiving dinner. Hubby and I decided to go to local casino resort for Thanksgiving...all you can eat tacos...then come back on Friday, cook a turkey and fixings for us, and watch the Apple Cup.
I love cooking Thanksgiving dinner but lately it feels less appreciated.

It is. But when I’ve served it at parties, I’ve learned that some people just don’t like raisins. (???)
I think the raisins really ‘make’ it, but it’s very good even without them.
