Has anyone here ever cooked one of those Canadian geese are all over pooping up the place?

A friend of mine said they did once but it was real greasy, but I think they just cooked it wrong. They look delicious!

is there a way to cook them that makes them better? I know you have to cook a duck a long long time to get all the fat rendered. I think those Canadian geese would need at least 12 hours over a slow roast, if not longer

Wild duck isn’t fat, around here. Treat ‘em like a roasting chicken, for the most part. Geese can be very fatty. Roast so that they can drain, and you should be fine.

I would love to try my hand at a Canada Goose. However I understand that for some reason they are considered ENDANGERED.

Isn’t the dish known as pressed duck cooked so as to render the fat out of the meat? Would like techniques that might work with Canada goose.

you can cook a goose whole in the oven just like a turkey, even use one of those bags if you like.

A convection n oven us best for cooking goose or duck. Time proven technique.
