I would love to try my hand at a Canada Goose. However I understand that for some reason they are considered ENDANGERED.
Endangered? What on earth gave you that idea? In many places in the US, Canadian Geese are highly successful / far-too-numerous pests that have to be aggressively culled to reduce the problems they cause to (barely) tolerable levels.

Now, it is true that numbers of migratory geese in some overwintering locations is down. But, that is partially due to the birds finding better opportunities, created at least partially by humans, elsewhere. Very interesting article:

I catch one that craps in my swimming pool one more time and it will absolutely be endangered.
