How to Make Refried Beans
Mexican Please ^ | 9AUG19 | Patrick

This is probably the easiest way to make a killer batch of refried beans without spending a couple hours cooking the beans.

If you want to read about cooking up some beans from scratch see our Frijoles de Olla post.

But this version starts with cooked beans — and you can get away with using a can of store-bought beans because you’re loading them up with authentic flavors.

This is a delicious, fiery version of Chicken Tinga. The key is to use both tomatoes and tomatillos, along with plenty of chipotles! mexicanplease.com

How to Make Refried Beans

Before we get to the recipe, it’s worth heading back in time to see what refried beans were like a few hundred years ago…

Pot beans get mashed up and cooked in some fat, most likely lard.  Plus maybe a bit of seasoning.

You really don’t need much more than that for a satisfying batch of frijoles refritos, but if you bypass the lard like we’re doing today then you gain quite a bit by adding in some additional flavors.  And note that the accepted term “refried” can be a little misleading; you’ll only need to cook them off once to make an authentic batch.

I’ve had a lot of refried beans over the years. These are the best bar none.

Yes, share your experience. Tex Mex very different from Sonoran.

We used to walk across boder eat street food go to bats and eat it with Margaritas and mariachis. Kids would dance and sing with mariachis.

The governments have almost destroyed that culture.

If you’re in a hurry, there’s a quick way to make great enilladas New Mexican or pancake style. Chop an onion, and rinse the pieces. Pour the enchilada sauce into a sallow soup plate, and dip the corn tortillas in without pre-heating them. Submerge the tortilla completely, and then place it on a ten or eleven inch plate. Put shredded Colby-Jack cheese on top and onions on top of that. Then add a tablespoon of sauce. Repeat, building up as many as five layers. Add cheese and onion over the top, and add some chopped jalapeños. Finally, pour more sauce over the whole mound. Cover, and put it into the microwave for three and one-half minutes, plus one minute for each layer over three. Of course, microwaves vary, so your time may be more or less.

All the Dickeys in NC that I was aware of have closed but if you go to Dickeys website their locator tab shows them still being open.

Well, if you buy them on eBay, yes. Somebody's doubled the price to sell them there.

I buy them directly from the company online. $3.33 per package for 16 packages is cheap.

Wow, just a “slight” markup. :-)

Not a bad deal from the company. With free shipping, think I’ll try the chorizo type.

I suggested that they do a “variety pack” for sampling, and mentioned they got a good review on FR.

I make what my grand kids call cowboy beans and they work great for refried beans with Mexican food. I use only pintos, I cook them in an electric pressure cooker. I add salt, garlic, tomato sauce, and real red chile powder to taste- not the one found in the spice bottles but found in packets in the Hispanic food aisle. I get mine from a farm that grows great chilies and I buy red and green chile powder. I used to add bacon but my husband has to eat healthy so I don’t use any bacon or lard at all.

My beans are great with any meal, they make fantastic chile beans, and are great refried. You will have to figure out how long to pressure for your area but I pressure mine until nearly done (my hubby likes them mushy) then switch to slow cooker setting on my Instapot for a couple hours to finish.

I agree. I salt mine before cooking and I think beans taste flat if you salt them after cooking unless you go overboard on the salt. My husband likes his beans mushy, so I don’t soak them. You do have to add quite a bit to cooking time if you don’t soak and some people don’t realize that.
