That is how I do it. When I put in a new kitchen sink, I got an extra deep double sink largely with chicken and other meats that I grill, BBQ and smoke in mind. I wanted an easily cleanable work area that would contain the splatters. The new sink is big enough to rinse off my brined turkey and stuff it without making a mess.

Place the entire chicken in the garbage when you get home from the store. After washing of course.
Similar to the old recipe for oven roasted carp.
Place prepared and seasoned carp on a fresh clean cedar shingle.
Roast at 425 degrees for 3 hours and fifteen minutes.
Remove carp from shingle and discard.
Eat the shingle.
My dad worked in a meat packing plant.
I wash ALL the raw meat I purchase for eating.

All surfaces and cutting boards (non-porous) are then wiped with the same solution after washing with Dawn and 180° water. Chlorine bleach is my favorite potpourri. I've never had any instances of contamination or illness associated with food contamination in my household.
Lazy cooks should heed the CDC if they like. But for me...they can go p!$$ up a rope.
