Weekly Cooking (and related issues) Thread

Probably the most famous of all the Pillsbury Bake Off recipes is the ‘Tunnel of Fudge Cake', which was one of the winners in the 1966 contest. This cake also led to a boom in sales for the Nordic Ware Bundt pan, which then became the most popular and most-sold baking pan in the US.

(Ella Helfrich’s cake was actually the second prize winner that year; the grand prize appears to have gone to Mari Petrelli’s Golden Gate Snack Bread, a savory cheese bread.)

The original recipe for Tunnel of Fudge used a packaged Double Dutch frosting mix which Pillsbury later discontinued, but here is the new recipe, using a cocoa powder glaze (a cake like this will only be as good as the cocoa used, so I'd be interested in hearing your brand suggestions for that ingredient):

John Corbett was also in the TV series, ‘Northern Exposure’ which I really loved!

He does a lot of voice-overs for commercials, too.

Those are really a goo dvalue - very versatile and makes a lot of Cheap Eats. When I had three teen boys at home, I made soups with those beans a LOT!

Adding that to my grocery list for when I dig out of here later this weekend. :)

That’s exactly what I think of every time I hear or read “bundt cake”.

I’ve never owned a bundt pan, probably because I’m always disappointed by my cakes. Just bought an oven thermometer and learned why. My oven temp is off. Set it for 350 and it was at 400. Turned it down to 300 and it dropped to 365, so it’s not consistently off. Other days setting to 300 has brought temp to 325. Not fun to work with.

We will be getting a new oven and I’m wondering if a duel fuel would be worth it-maybe an electric oven is better at regulating temperature?

You can modify it anyway you like. I use chicken broth instead of just plain water (five cups) then garlic, ham, juice of one lemon, and whatever else strikes my fancy in the spice cabinet. It always turns out that the guys (five) plus me and mom would wipe out that pot in one meal.

We have one right down the street. They are ok but I think they use cream cheese icing on everything.

My husband would like that.

He’s always raving about a Hershey’s chocolate syrup that his mom gets in PA - it comes in a glass jar, and you’re supposed to microwave it before putting it on ice cream.

We’ve looked all over, and can’t find it in supermarkets down here.

I buy it for the cute little Dutch girl on the cover! I love nice packaging which is why I own too many tubes of Italian-imported anchovy paste.

It may be double-Dutch.

Here's another down-n-dirty, inexpensive, easy to throw together, meal. I never add the dry packet of ranch dressing, I use 2 pkgs. of the taco seasoning. I always had a big crock pot of this going when my guys were selling Christmas Trees for me when I managed a Jung Garden Center. Sour Cream and shredded cheese and chopped green onions on top is a nice add-on and some Fritos or Tortilla Chips.

Oh, Yes. Always use broth when you can! I can’t roast a chicken and NOT make broth - it’s a sickness with me!

TEXAS CHOCOLATE BILLIONAIRES / Yield: About 2 pounds.

ING 14 oz caramels, 3 tb water, 1-1/2 c chp nuts, cup crisp rice cereal, 3 c milk choc/chips, 1-1/2 tsp shortening.

PREP W/ paper two sheetpans; grease paper; set aside.

METHOD Combine/stir caramels and water on low til smooth. Stir in nuts and cereal to coat.
Drop teaspoonfuls onto prepared pans. Chill firm 10 min.

FINAL Dip into coating; place on prepared pans. Refrigerate/set.

COATING melt chocolate chips/shortening on low; stir smooth.

They don’t make many movies that you sheerly enjoy like that and want to watch over, anymore.

Another one we’ve always liked was the Kirstie Alley/Tim Allen movie about a selfish couple who wind up with the Amish.
