Weekly Cooking (and related issues) Thread

When we came home tonight, my husband smelled cooking coming from a neighbor’s place, and said it reminded him of a childhood favorite, Tuna Noodle Casserole. He hasn’t made it in a long time, but grew up on a recipe that used the typical canned-soup approach.

On the food network site, Pioneer Woman Ree Drummond has a from-scratch recipe that looks a lot better:

Another recipe from prepared items that we used to make was Corned Beef Hash, using canned corn beef and mashed potatoes. But if you are having corned beef for St. Patrick’s day, here’s a more interesting recipe for your leftovers, from the Happy Money Saver site:

Forgot to mention, a 5lb chicken will take 4 hours on high in the crockpot and will be so tender it will fall apart when you take it out. The house smells wonderful when it is cooking.

I ate in his restaurant when I was a young chef trainee and was in awe. I don’t know if I said one word to him, cool you got to meet him. And (not keeping kosher then) there was no choice on what to order. Crawfish etouffee. I had ripped my hands to SHREDS each time I had to cook crawfish so i had to order a bowl that someone else did the work for.

We have cats & a dog. I had to look up struvite crystals. Our oldest cat Sol is 18. I know pumpkin is good for urinary health soi put some Libby’s pumpkin on the cat’s food & the dog’s too. Just a suggestion. Specialized animal products are all quite expensive.

I’m going to try a chicken like this. I don’t want to give up on the crock pot without more experimentation.

I love crawfish! Frozen is not as good as fresh but I buy some every year to make a crawfish pie during Lent.

FYI, canned salmon usually goes on sale during the Jewish high holy days. And club soda/seltzer water as well.

That’s true, if and when I switch him to a raw food diet I should add some pumpkin. Since he is my little piglet he might actually eat it. I wonder if butternut squash has the same qualities? I grew an overabundance ofit this summer and need to start using it up!

Salisbury Steak

Take one large onion and grate it, smush up three garlic clove. Mix half with a third of a cup of bread crumbs and let the bread crumbs soak up the juice.

Mix with one pound of hamburger, an egg, a heavy squirt of ketchup, two squirts of Gray Poupon, a dash of Worcestershire and one of those left over beef raman flavor packets you have sitting around.

Form into six patties.

Brown these on both sides in a large skillet. Remove patties and add to skillet the other half of the onion and garlic and two cups of sliced mushrooms. Salt and let cook for about three minutes.

Add a couple of pats of butter and some flour to make a roux. Stir until the raw taste is cooked out of the flour. (Or use toasted flour, better flavor). Stir in about a pint of beef bone broth. Add about a teaspoon of green peppercorns. When combined add the patties back into the gravy and turn down. Let simmer for about seven minutes.

Add in about a half cup of heavy cream at the last minute if you like.

You can leave out the cream and use olive oil instead of butter if you want to make this kosher.

Well, eat another forkful for me. I will never have crawfish again but at least I know how yummy it is. Good enough for me now.

We live with five indoor cats now, and two outdoor. Three of the indoor are still young, all feral rescues. Same for the outside cats, only one will accept affection.

A lot of wildly different personalities around here. I am the crazy old cat guy.

I love it, thank you for being their angel.

my favorite stray wouldn’t let me near him. But he would play with my puppy all day long, not even using his claws. It was the cutest thing. The only time he came up to me was when he was sick, very sick. Before that I had to trap him to take him to the vet. But when he let me take him, I knew it was bad news. And it was, I had to put him to sleep. He was only four and I really got attached to him even though I couldn’t pet him. He would let other cats come and eat his food. He protected my other outside cat from the neighborhood bullies. He was just the best cat.

I didn’t know that, thank you. What do they use salmon and seltzer water for?

I like to make Italian sodas with the club soda/seltzer.

I think that solidified chicken fat is called schmaltz. I started saving some of it because I make my cats a raw food diet. Since I use chicken, additional fat needs to be added. That stuff smells so good that occasionally I’ve used it when sautéing something. It really adds a lot of flavor. Not as good for us as vegetable oil I’m sure, but just like bacon fat – in moderation it is delicious.

That is an adorable combination. Is he still real active at 13? I worry about mine getting older. He’s my best friend. And at 5 pounds, an amazingly good hiker.

I make stock from whatever is cheap at the store. Sometimes it is necks, maybe wings, maybe legs.

No cats here anymore. When we used to eat more whole chickens I would save the backs, necks and gizzards and throw them in the freezer. When I had a potful I would cook them on low all day long. Just enough water to cover them. The bones have to get really soft. Then I would cool to room temp. Use either a blender or Cuisinart to pulverize the heck out of them. Start with the meat and bones and only add stock if you need to. The result should be pasty but not liquidy. When cooled it was the most favorite of all cat foods. Looked like chicken mousse. And we called it that.
