Weekly Cooking (and related issues) Thread

When we came home tonight, my husband smelled cooking coming from a neighbor’s place, and said it reminded him of a childhood favorite, Tuna Noodle Casserole. He hasn’t made it in a long time, but grew up on a recipe that used the typical canned-soup approach.

On the food network site, Pioneer Woman Ree Drummond has a from-scratch recipe that looks a lot better:

Another recipe from prepared items that we used to make was Corned Beef Hash, using canned corn beef and mashed potatoes. But if you are having corned beef for St. Patrick’s day, here’s a more interesting recipe for your leftovers, from the Happy Money Saver site:

I have the little squeeze bottles and I can’t get them to work well. I need a decorating course. I can’t believe the stuff they do on the Great British Baking Show (which we watch almost every night). So talented. I’m horrible.

Once we ditched all kibbles (dry food) for cats, years ago, we’ve never had a heavy cat. Feeding them twice a day, they seem fine.

The rolled fondant for cakes? Italian Meringue frosting? Too much trouble.

Those Brits are great bakers. Had a friend Margaret when we were in the service in CA. She made a beautiful, tasty trifle, never had heard of one before. But the most delicious was meat loaf, made tastier with OXO cubes or something, and frosted with cheesy mashed potatoes, then put back in oven and browned.

Kind of a variant of Shepherd's Pie but I always wanted to duplicate what she made. Always wonder what became of her.

What I get for multi-tasking. Put some cr of tomato soup on for 10 minutes, had the heat turned too high. Boiled over, into the well, horrible mess. Cleaned up the worst of it and will try to get the rest tomorrow. I HATE it when that happens.

I learned how to make this on youtube. Maybe you can help me improve it by not having all those breaks.

Found another can of tomato soup and almost boiled that over, caught myself and didn't have the heat so high. Too preoccupied tonight :-(

I give them wet food every day. They barely touch it most days; now and then, they eat some of it.

Our current ones came from a rescue outfit, born there. I think all they ever got was dry food.

I have heard so many arguments about wet v. dry; but we’ve had cats who stayed normal weight, or got fat, on either.

Our current cats are ok; they are brothers, one small, one hefty. Neither overweight; but I would really like to get them interested in more than just one type of food...

Thanks :-) we knew we had to put a woodstove in because they are so cozy. Plus, I can’t be a good prepper without a heating source that the government can’t tax!

And I love my Yorky. I love the kitties too but this dog misses me when I just go to the mailbox. I’ve never had that kind of adoration.

That’s funny I’ve been doing the same thing. I had a backache for about a week so I got the heating pad out. I noticed every time I got off of it my older Kittie, who is also 15, crawled on top of it. I figured if it feels good to me, I probably feels even better to him. They are probably what, 75 in cat years?

lol! Actually that one is corduroy. His sister is cotton. And my nickname for her is Cottonball. So yes, that’s for my screen name came from :-)

That is cotton on the right, corduroy on the left. Or maybe it’s the other way around…

You should see our three younger cats go insane when my wife brings home fresh Ono (Wahoo to you easterners).

They know I trim out the blood meat. They would sell their little souls for diced up blood meat, and the wife will not allow it in what I cook for her.

Same thing when we have scallops. The older little girl is insane about scallop muscle. We caught her dragging off a whole scallop from the counter a year or so ago. She is nuts about it.

We only eat fresh Ahi (tuna) and I love trying to perfect a seared Ahi dish. Sauces continue to elude me, keep analyzing what local restaurants do.............

I can see trying these using a homemade marinara sauce..

Porcupine Meatballs

Ingredients
Ground Beef - 1 Pound
White Rice-Uncooked - 1/2 Cup
Ketchup - 1/4 Cup
Onion, Finely Chopped - 1/3 Cup
Large Egg, Lightly Beaten - 1
Celery Salt - 1/4 Teaspoon
Salt - 1 Teaspoon
Black Pepper - 1/4 Teaspoon
Dried Italian Seasoning - 1 Teaspoon
Garlic Powder - 1/2 Teaspoon
Sauce:
Condensed Cream of Tomato Soup - 1 Can
Worcestershire Sauce - 2 Teaspoons
Water - 1 Cup
Optional
Cheddar Cheese, Shredded - 1 1/2 Cups
Flat Leaf Parsley, Chopped - 1-2 Tablespoon

Instructions
In a large mixing bowl, combine all the ingredients for the meatballs and mix together well wit clean hands.
Roll into 20, 1 1/2 inch meatballs. Place meatballs in a large skillet.
In a small mixing bowl, combine the ingredients for the sauce. Pour into skillet over meatballs. Bring sauce to a boil over medium heat and reduce heat and gently simmer for 15 minutes, covered. Very gingerly turn meatballs and continue to cook 25 minutes longer, or until meat and rice are cooked through.

Ingredients
Meatloaf
1 lb Tuna (canned albacore in water works out well)
1/4 cup finely chopped onion (optional)
2 eggs, beaten
1 cup rolled oats instead of plain bread crumbs
1/2 cup milk

Steps

1. Heat oven to 350°F. In large bowl, mix Meatloaf ingredients well. Press mixture in greased 8x4-inch loaf pan. Bake 60 minutes or until meat thermometer inserted in center of loaf reads 160°F. Let stand 10 minutes before serving.

Note: for sandwiches, place loaf in refrigerator overnight and slice for sandwich.

I prefer it with mayo and a very light smear of yellow mustard.

Most of these things are rich in taurine, which is essential to cats and perhaps why they naturally like them so much.

Oh, yes. That’s the only way people hunt these days. The days of walking for miles and miles just to see what your dog is up to, are over. GPS all the way. He has the Garmin system and is pretty happy with it.

The ‘techie’ end of it appeals to younger hunters, and the ‘not walking for miles’ appeals to the old guys, LOL!

I still contend that The Humble Chicken is G-d’s greatest creation! Eggs, feathers, pretty much all meat, bones for broth, etc. They also make nice pets. Chicken hugs are the best! ;)
