You sound like a good cook. I take the solidified fat off too.
I think that solidified chicken fat is called schmaltz. I started saving some of it because I make my cats a raw food diet. Since I use chicken, additional fat needs to be added. That stuff smells so good that occasionally Ive used it when sautéing something. It really adds a lot of flavor. Not as good for us as vegetable oil Im sure, but just like bacon fat in moderation it is delicious.
