Thanks. We have a lot of Gluten Free options here in the SF Bay Area. I did order some GF sourdough bread from a bakery in Utah via Amazon. It was just ok, but made pretty good toast. I’m using dairy free Earth Balance spread after experimenting with ghee (clarified butter with no milk solids) and Blue Bonnet margarine as well as A2 milk.

I experimented with two dairy re-introductions and immediately got horribly sick. A week ago I tried about 3 ounces of Bailey’s Irish Cream (50% cream) and got sick for 65 hours. I tried some M&M Peanut candies yesterday afternoon (milk chocolate) and got sick about 30 hours. I did allergy tests and was negative for dairy, wheat, and dust mites.

I have lost 16 pounds on Keto since 01/02/18. Been very strict. Have drunk nothing but back coffee and lots water since I started. The only problem is constipation.

Thanks. It’s all encouraging, for sure. Easier to keep doing it with measurable positive feedback, too. I’m following up with my GI doc in a couple of monthhs, doing some more tests for Celiac, and H. Pylori. I’ve got a lot more time to focus on this having retired.

Wow, congrats. That’s amazing. Any of the problems the author mentioned happen to you? I’m down 5-6 on this modified/partial approach.

I see they recommend a gallon of water per day. That’s a lot. I’m probably less than half that.

Keto is great, so is low carb. The best I felt physically and mentally was when I ate meat only. Thanks for posting.

Thanks, a bit of Keto flu after the first few days, but no others other than constipation. Drinking a lot of water, but not a gallon/day. That is really a lot.

I’ve been using Milk of Magnesia, but I don’t want to get dependent on it. I’m also cutting back on cheese intake. We’ll see what happens....

Okay, thanks.

Some of the things I've been reading about Keto, and the youtubes I've watched, recommend eliminating all cheese from your diet, while other readings/videos do not, and some actually recommend eating certain kinds of cheeses for Keto.   (I have also seen sources where they recommend drinking copious amounts of water every day, but then you have to have a lot of time available to keep visiting the bathroom repeatedly, all day long.)

I keep track of my food intake and every day it is 50+% fat. Healthy fats from healthy animals or organic plants. Sometimes I might be in keto but I don’t care, don’t need keto. But I have proven beyond a shadow of a doubt that fat does not make you fat.

Healthy fat tastes good, fills you up, gives you pleasure. Don’t skimp. Just avoid processed carbs and most sugars and you will be fine.

Your diet sounds great. Have no fear of potatoes and other tubers, cooked regularly (not always fried). And definitely keep adding your fermented veggies. Your gut bugs NEED starchy carbs, fiber. And we need the gut bugs for digestion, and for mental health. Carbs are not the enemy. -Processed, useless carbs, sugary carbs, they are. Stiff veggies with good fiber and tubers like potatoes etc are important to our diet.

Keto is only essential for people with medical conditions who need ketosis. For health or weight loss, you don’t need keto. You MUST eat fiber and good carbs for your gut bugs, as we can’t live without a healthy gut bacteria population. They are the key to our digestion, our mental well being, and our immune system. We simply MUST focus each day on feeding them. They eat resistant starch and other fiber. Low carb is good but no carb is bad except for specific medical conditions. 50-80 g carb is fine. But you have to get in that starch and fiber daily.

I stopped eating fruit too, for about 6 months. It helped me a lot. Now I am adding it back in, 1-2 bites a day, and here is how I like to do it. I cut up apples for mom, and I eat the bottom of the core including the seeds. The seeds apparently are very healthy. And since I am not used to eating sweet fruit, it works for me. That way I get a little tiny bit of fibrous fruit every day now. When berries are in season I will eat blueberries or blackberries in small quantity.
