Weekly Cooking (and related issues) Thread

I’ve never made gnocchi, the Italian potato-based ‘dumpling’ ; but recently while looking for recipes, I found this beautifully-presented and unusual style of ‘gnocchi’ done by my favorite YouTube chef, John Mitzewich of 'Food Wishes'. It makes a very pretty side-dish with little effort, and looks like real comfort food. You should be able to find semolina flour in the health-food store, or in some grocery stores – I’m sure it’s included in the Bob’s Mill range of grains. Last week, Freeper KJC1  described a roasted ‘Salsa Verde’ that I wanted to try; so I looked for recipes that sounded similar. I found this, and it was wonderful with my husband’s pulled pork, which has become a staple here since we acquired an Instant Pot.

For my first attempt I used only poblanos; but now that I’ve got it down, I’m going to spice it up! This will go very well with tacos, pulled pork, or any other Mexican-style meal. This recipe suggests grilling, but we did it as KJC1 suggested, under the broiler; adding the cilantro when we whizzed it all in the processor.

I love Kimchi. Decades ago, I became friendly with an immigrant family who introduced me to their cuisine. I’ve never been able to make Kimchi like their Oma did, but fortunately there are some good ethnic stores nearby ;-)

I don’t like a lot of fishy-stuff in it... and I was never able to get used to those ‘pancakes’ they make with Kimchi in them. YMMV, however; and here’s my favorite Internet Korean cook, Maangchi, with a recipe for Kimchijeon:

Wow, thanks to all of you for your gnocchi recipes/suggestions. I’m going to have to try and make them. I think my husband had them from the grandparents in his youth, and might like to have them again.

(Boatbums, Gorgonzola wouldn’t go over with the Husband Unit; but I would love it!)

Regular gnocchi are often served with sauce; I’m not sure I’d want Salsa Verde on them ;-)

If you made them with corn meal and added some of the Salsa Verde and that crumbly cheese it would probably be pretty good.

Maybe topped with a fried egg.

And then I think we’d be somewhat ‘New World’.

I suppose the Italians put some eggs on their polenta, now and then - the whole universe of cuisine is sort of ‘mixed-up-and-turned-around’; and that’s kind of nice.

We can get together, over food, even when we can’t get together over much else :-)

Somewhat.

On the weekend I tend to go through what I have in the pantry and try come up with new combinations.

I made Swedish meat balls but added a dash of very dry sherry and fresh thyme in the last five minutes of cooking.

Husband gave it two thumbs up so I guess it worked.

I’m happy to hear you tried the salsa verde (even though my “recipe” wasn’t very exact lol). I haven’t tried it on homemade nachos, but I bet that would be delicious. Now my stomach is growling!
