Tomatoes gain their flavour from a combination of sugars, acids and aromas, but a new study has examined exactly how different elements influence their taste.

Boy am I ever glad they figured that out. I couldn’t even sleep at night worried about it.
As a backyard tomato “farmer” I’ve never had a store bought tomato match the flavour of homegrown, even if it’s just a common variety and not an heirloom variety. Cold storage can’t be good for flavour.
I hope to hell none of my tax money was spent on this “study”.
I’m not buying it.
The poor taste is because they are picked green and not allowed to vine ripen. Then they are exposed in factory warehouses to ethylene gas which causes them to turn red. They look ripe but they are not ripe, hence the tastelessness.
I am not buying this article at all. If the tomatoes were picked vine ripened, they would taste fine.
And only eat tomatoes in season. I’m lucky that we have the farmer’s market opening next month with excellent tomatoes starting sometime in July or early August.
Bingo. The people want tomatoes that LOOK good, so quit your bitching.
At the end of the season I pick the remaining green tomatoes and put them in a brown paper bag with an apple.
Ya think that might be a factor, too?

Tomatoes, like blueberries, are one of new jersey’s biggest and best crops.
Bananas are the same way, picked green so they never develop their sugars.
My sister grows tomatoes for a Farmers Market. The variety she grows are very firm, good looking and tasteless. They were bred to stay tougher and smash less for shipment. They are red and look good but that is all. She gave me some seeds and even grown in the garden are tasteless.
I won’t advertise for a certain brand but we have experimented with several varieties and have found some with great flavor. Never use Romas for tomato sauce. They are tasteless.
Go to a country where they pick and sell fresh pineapple. WOW.

I have found that I can buy organic bananas at the grocery store and they are much more like the flavor of bananas when I grew up. Maybe tomatoes will do the same thing, but there is nothing as good as a homegrown tomato fresh from the garden.
I have solved the tasteless winter tomato dilemma. Martha Stewart has a recipe for oven dried tomatoes, which concentrates the flavor. I keep some in the fridge for use in sandwiches and salads.
