I have been experimenting with making my own apple pie "moonshine". I am using 190 proof Everclear..looking for advise or maybe a recipe.
A few notes.
First is that most apple juice and apple cider is reconstituted from concentrate, pasteurized and even has some preservatives added to it. Blecch.
Instead it is far better to make your own apple cider and apple juice, and even some mini-refrigerator hard cider.
You do need fresh, cored and peeled ripe apples (with the bruises cut out) and a fruit and vegetable juicer.
You usually get best results from a blend of apples: Gala, Fuji, Rome, Granny Smith, Honey Crisp, Braeburn, Cox’s Orange Pippin (possibly the tastiest), Pink Lady, Macintosh and Yellow Delicious. (Red Delicious are “decorative” apples, they look pretty but their flavor is not so hot.)
When you juice them, the cider should be cloudy, and you need a 2 or 3 gallon yield. If you want some hard cider sooner than your apple pie Moon, take a gallon of the cider juice and stir in a bunch of sugar, and put it in your otherwise empty miniature refrigerator set at 60F, which is optimal for fermentation for a week or two, stirred every other day.
When you get a good, strong alcohol flavor, and most of the sweetness is gone, set the refrigerator to its coldest freeze overnight. The next day pour off the pint or so hard cider from atop the rest of the gallon of water ice and fermented apple pulp.
Once you taste the hard cider, compare it with Apfelkorn liquor, made by Berentzen. It is sweet apple schnapps, and while by itself it tastes okay, compared to homemade hard cider it should taste like industrial solvent.
With the other fresh cider, filter half so you have a gallon each of cider and apple juice, then continue with the recipe for apple pie Moon.
We had a college party about 30 years involving 15 cases of Everclear. I would like to say I don’t remember all that much about it...

But then 15 cases of Everclear would last several people long enough to have a 30 year lapse of memory.

Last time I drank Everclear (many many many years go) after the first 4 shots, you could have told me that dog doo tasted like apples.
When I woke up, my mouth felt like Neil Young had slept in it.

I dabble at making my own pizza sauce. Found that IGA brand crushed tomatoes are equal in taste to what I thought the gold standard - Muir Glen - at around half the price.
I can eat those (Muir Glen) right out of the can! I only make my own sauce if I’m cooking a huge batch of Lasagna, like for a Church dinner.

I guess you are right. I was in the wine business (actually vineyard) before 2001 before Bill H.R. 3249 was passed making it legal to produce for home consumption, but one should note the numbers involved. Speaking from personal experience, they are crazy hard on violations.
190 proof Everclear would probably make good rocket fuel. You can’t dress up that godawful taste, because it tastes like rubbing alcohol smells. And after a couple of shots of that stuff you will definitely see demons. Think I’ll stick with the Hennessy.
I have no idea of its origin, but about a year ago the wife of a LEO (standing next to her) at a party I just dropped by (my kids had invited me) for a few minutes insisted that I try some - two sips, and wow!

Yes, two sips was it, and I went home.....but I’ll never forget it.
It's moonshine that tastes like apple pie. We make it while we're boiling down sap turning it into syrup in the U.P. .....
Beer and wine are fine, distilled drinkables are not (without the proper licenses and all) even for personal consumption. A good parallel to how additional gun laws only affect the law abiding citizen.

Many years ago, I drank bourbon.
Southern Comfort, specifically.
And then, one night, I was in a roadhouse, really ripped on it and a biker who looked like Sam Elliot casually remarked that bourbon tastes like cough syrup.
I never drank it again.

Some vanilla bean sliced, cinnamon stick and a few apple slices , no sugar should do it...let it steep for a few minutes, hours, days, weeks then, shake and taste then filter thru a coffee filter....

It could probably function as either. When we had PJ parties (Purple Jesus, a concoction containing Everclear, fresh fruit and fruit juice) in college, we'd always light off the empties ... thwummmpp blue flame shooting out several feet. If anyone ever offers any PJ to you, don't eat the fruit if you want to remember the next, oh I don't know, day or so I guess, lol. Serious stuff.
