Just drank beer #1 prior to reading this.

I really am NOT trying to hijack this thread but have you seen this?

I usually like to try all new breweries and believe me, San Diego has a few. But that is one I where I know I will never go.

Wow does that mead look delicious!

I don't believe I'm up for beer tonight. Had 1 too many of my 14%ers last night. Only had 3 but just not thirsty today.

UFC event tomorrow, however. The beer will flow like wine! Like salmon back to Capistrano!

Do you have a ping list for beer/wine brewers fermenters? Please add me to your ping list.

Brewing a molasses 'beer' and one that is the same only with added ginger root. They are OLD recipes, but I figured I'd give 'em a try. I was very suprised at the flavor of the wort. It may be pretty good.

Wahoo! Beer/Wine thread!

I checked our recipe books for fig wine & found nothing (referring back to last week’s thread). However, Jack Keller has a Fig recipe...

http://winemaking.jackkeller.net/reques6.asp

The wine-making book we use actually tries to make a wine from fruit that is less reminiscent of the fruit than a generic grape wine. We’ve gotten in the habit of doubling up on the fruit in the recipes to enhance the fruit flavor. Not sure how fig will turn out but it should be interesting.

Way past time for me to brew again. Just drank the last of my Irish Blonde keg. Many tears and gnashing of teeth.

I have a keezer so I’ve considered another lager. I’ve only done one and it had so much diacytl that it tasted like movie popcorn. Nasty. I was able to clean it up by getting another yeast culture going, raising the temp of the beer, pitch, and let the little yeast-beasties do their clean-up work. It helped a lot, but I didn’t share that beer with friends.

Yeast is a most magical friend of man.

You can easily culture yeast from some bottle conditioned beers made commercially. You will quickly learn how to make starters if you keep a yeast library on slants. I start my starters about 2 weeks out because when using a slant you are starting with a pinhead size cluster of cells.

First a 12oz starter then a 1/2 gallon starter. Pitch a half gallon to a 5 gallon batch and you will be rolling in a few hours.

My neighbors have been admonishing me not to make any more homebrew. They tell me, “it makes me do funny things after I drink it”...........
