PORTER ALE
After last weeks positive acceptance of the Homebrewing Thread a few of you decided we needed to go weekly with this thread and I agree. Thanks to all who participated in last weeks thread.
So lets get talking about beer and wine. Last week I bottled a 9.3% Porter and decided to try one yesterday just to see how it was doing. As you might suspect it was nowhere near the carbonation level I was looking for, it needs another week or two or more. But I drank it anyway. It was quite sweet like a malty koolaid. I suspect the sweetness will mellow out and the carbonation will improve after a few more weeks aging in the bottle. After the last few sips were downed I actually needed to take a nap. It is not a session or lawnmower beer for sure!
I brewed up a Copper Ale yesterday morning. OG was 1.080 and it has a beautiful deep copper color like an old copper brew kettle. I also transferred my Honey Ale to a secondary after it had been in the primary for two weeks. So things are moving at a nice pace in order to keep the homebrews flowing around here.
Typically I like to brew the darker beers but the Honey Ale and my next brew, a Liberty Cream Ale, are Light Ales. I hope they turn out to be good brews.
When I dont have a homebrew ready to drink I have been enjoying some Shiner Bock and a couple of styles of Blue Moon Ales. I tried a Belgian Wheat Ale from Blue Moon, which I did not like at all. Yuck! It is not a beer I like.

I’m getting interested in kegging. I’ve been brewing and bottling my own for about 6 years now but the bottling is really a hassle.
If anybody has any advice or tips on this I would sure be appreciative.

Conditioning an Octoberfest brew ready late August. Currently enjoying a great IPA, a fine copper ale, and a Dynamic Pilsner!

I still do small batches of hard cider to use in cooking (Beef Rib Marinade)
I always favored making stouts, Scotch ales and Bocks. And Hefe Weizen-the flavors really come out in home brew
Like last week I am having a Nut Brown Ale. Last one. I have a six pack left that I am going to set aside for a few more weeks.

I have a bohemian-style lager in a secondary right now and am thinking about the next batch in a couple of weeks. Any suggestions? I’d like it to be a nice summer beer - crisp and refreshing, fairly low alcohol (around 4 - 4.5%) and not too bitter, but I like a hoppy taste. I did a pretty successful Witbier a few months ago, with orange and coriander flavoring. Post your recipes, if you have ‘em.
I've been told by a distributor that I can't get it in the States, anymore.

How is that Copper Ale you have? Was it an extract kit?
The Liberty Cream Ale I will brew next is described as light bodied and refreshing:
6 lb. Gold liquid malt extract
8 oz. Carapils steeping grains
2 oz. of Cascade pellet hops (use 1oz as bittering hops and 1oz as aroma.
Yeast is SafAle 05
Sorry, should’ve said I am a grain brewer - that recipe looked interesting, so any grain bill that corresponds to the extract recipe?
All grain bill;
7 lbs. Domestic 2-Row Barley, 2 lbs. Flaked Corn, 8 oz. Carapils, 2 oz. of hops

You need to take the empty gas bottle to a welding supply place and fill it as it ships empty. BUT you can cut out the 2 weeks in the bottle time and get rid of bottles.

Liberty Cream Ale is a regular for us. We brew it almost every other batch as everybody likes it and its fast/inexpensive.
