Sheeps head is not for wimps. Until now very few of us have been tempted by this traditional Norwegian dish.
"It's a pity, because you will really have to look far and wide for a more tasty traditional dish," says Professor Reidar Mykletun at the Norwegian School of Hotel Management at the University of Stavanger.
"With good potatoes, rutabaga mash, beer and aquavit sheeps head is a tempting experience for genuine lamb enthusiasts. But sheeps head is an example of a dish that is scary for many of us. With both ears, mouth, teeth, tongue and eyes looking at you from the plate, its close to being revolting for the uninitiated", he says.

I never heard of Lutefisk until I was stationed in North Dakota. The smell of that stuff could knock a buzzard off a gut wagon.

Gosh! The way my Dad cooked it, you didn’t even need to chew! It just melted in your mouth. I believe it was the tenderest “cut” of any kind of meat that I’ve ever eaten. I love liver! But it has to be very fresh. From a butcher shop, not a supermarket.

Ex-ladyfriend, born in Shanghai, always ate the fish eyes. Tastiest part of a fish? The cheeks. Not much there though, unless you get a really big fish head to cook. I always cook fish “head on.”

On our honeymoon, hubby and I stopped at a little amish restaurant and when they found out we were newlyweds, the waitress gave me an amish cook book...one of the first dishes in it was calfs head soup....I never found a calfs head so never made the soup...:O) That was 1957 or 58, don’t remember which. I think it 58....
