Sometimes I would like to go back to those sweet innocent years (maybe for a little while!) LOL! Thanks, yorkie.

I've gone way back to Wednesday and read this from Amy:

Hey, I enjoy fried spam once in awhile. I fry it and make a sandwich or serve it with scrambled eggs. I’m not fond of chipped beef on toast but occasionally I make hamburger gravy and serve it on toast or mashed potatoes. Is that country or what?

Don't want any spam any way it's served, but put me in the camp that likes 'chipped beef' (Stouffer's Creamed Chipped Beef) as an easy lunch over wheat toast or a baked potato. I wouldn't know how to 'make' chipped beef any other way. LOL!

Speaking of the hamburger gravy, what comes to mind is when we lived in Louisiana, this wonderful Cajun woman used to prepare for us what she called "Rice 'n Gravy" - which was much MORE than gravy - everything begins with a roux - the hamburger browned and added to the roux 'gravy' and served over rice. Yummy! :)

How neat to have the deer come so close you can see those big brown eyes right outside your window!

I have used Stouffer's for a quick meal but I like the chipped beef gravy I make! On toast or biscuits! I buy the little jars with chipped beef and cut it in small pieces. Sometimes I make the gravy and just add the small pieces to it.

I have sauteed the small pieces, then added the flour, sorta like a roux until its a little caramel colored and add the milk. Delicious! My mother used canned evaporated milk and water for a richer gravy. I just use milk.

While I may not eat raccoon or anything else with hands, fried Spam is good and hamburger gravy is good and chipped creamed beef on toast (SOS) is good and anything Cajun is good.

Makes me kinda want some hot chipped beef gravy on toast, ya’ll! Fewz, anything cajun is good. My son just learned to make Jambalaya. He had a friend who knew how to do a good roux and he went over to my son’s house and taught him how to cook it.

I’ll be back soon, have some things to get done!

That’s what I can fix for supper! I’ve got a box of Zatarain’s jambalaya mix so I can have chicken jambalaya. Thank you ma’am. I’ve been trying to think of what I wanted to have.

Sounds good to me! I’ll have to try that Zatarain’s jambalaya mix! I’ve been hungry since all of us started talking “food”....I’m thinking about calling in for Chinese take-out!

Hmmm, I have never bought the little jars with chipped beef - actually have never seen them, but I've never looked for that. I buy canned red sockeye salmon to make salmon crouquettes, and I've bought small cans of white chicken to make an easy chicken/green chili casserole, but that's all of the canned meat I've ever bought.

fewz, I've also bought Zatarin's jambalaya mix - it's seasoned really well. :)
