Did you hear about the guy that lives on nothing? No seriously, he lives on zero dollars a day. Meet Daniel Suelo, who lives in a cave outside Moab, Utah. Suelo has no mortgage, no car payment, no debt of any kind. He also has no home, no car, no television, and absolutely no creature comforts. But he does have a lot of creatures, as in the mice and bugs that scurry about the cave floor hes called home for the last three years.
To us, Suelo probably sounds a little extreme. Actually, he probably sounds very extreme. After all, I suspect most of you reading this are doing so under the protection of some sort of man-made shelter, and with some amount of money on your person, and probably a few needs for money, too. And who doesnt need money unless they have completely unplugged from the grid? Still, its an amusing story about a guy who rejects all forms of consumerism as we know it.

Caramelized Red Onion Relish
Balsamic vinegar is the magic ingredient in this recipe. It adds pungent
sweetness to the caramelized onions. Serve with BBQ or broiled meats
such as steak, lamb chops and chicken.
4 large red onions, peeled
1/2 cup firmly packed brown sugar
2 cups red wine
6 Tbsp balsamic vinegar
1/4 tsp each salt and pepper
Slice onions into thin slices. Combine onions and sugar in a large non
stick skillet. Cook uncovered over medium high heat for about 25 minutes
or until onions turn golden and start to caramelize, stirring frequently.
Stir in wine and vinegar. Bring to a boil over high heat, reduce heat
to low and cook, for about 20 minutes or until most of the liquid has
evaporated, stirring frequently.
Season to taste with salt and pepper. Spoon into prepared jars leaving a
1/2” headspace. Process in a boiling water bath for 10 minutes. Adjust
time according to altitude.
Makes: 4 half pints
12 cup Chopped Onion
2 cups granulated sugar
2 Tbsp canning salt
1/2 cup water
1 1/2 cup cider vinegar
Combine onions, sugar, salt & water. Bring to a boil over medium heat,
stirring
often until sugar is dissolved. Cover, reduce heat to low and simmer,
stirring
occasionally, for about 20 minutes or until onions are softened.
Uncover, increase heat to medium low and boil gently, stirring often,
for about
40 minutes or until onions are deeply caramelized.
Increase heat to medium high, add vinegar and return to boil stirring
often.
Reduce heat and boil gently, stirring constantly for about 5 minutes or
until
mixture is slightly thickened.
Ladel into jars - 1/2 inch head space.
Process 10 min. in BWB. Adjust time according to your altitude.
Makes: 8 half pint jars
A tangy orange flecked relish. Ready for hotdogs.
2 cups ground carrots, lightly packed
4 cups ground cucumber with peel (about 2 1/2 lb)
1 1/2 cups ground onion
2 Tbsp pickling salt
2 1/4 cups sugar
1 1/2 cups vinegar (5%)
1 1/2 tsp celery seed
1 1/2 tsp mustard seed
Put vegetables into a large saucepan. Mix in salt. Cover and let stand
on counter
for 3 hours. Drain thoroughly.
Add sugar, vinegar, celery seed and mustard seed. Heat on medium,
stirring until
sugar dissolves. Cook uncovered for 20 minutes, stirring occasionally.
Stir more
often near end of cooking time.
Pour into prepared jars leaving a 1/4 headspace. Check for air bubbles.

5 1/2 tablespoons potato flakes
1/2 teaspoon dill weed
Pinch of pepper
1/2 teaspoon salt
1/2 teaspoon dried onion flakes
1 tablespoon Knorr classic white sauce mix
In small bowl, combine all and mix well. Seal in zip-top bag and put in mug. Decorate and attach directions:

1 tablespoon butter
Place soup mix from bag into mug.
In a small saucepan over medium heat, place water and butter. Mix well and bring to a boil. Pour heated butter mixture over ingredients in mug. Mix well, cover and let sit for 5 minutes. If desired top with shredded cheddar cheese, sour cream or soda crackers.

Honeybun Coffee Cake in a Mug
1/3 cup yellow or spice cake mix
Topping mix:
2 teaspoons brown sugar
1 teaspoon finely chopped pecans
1/4 teaspoon cinnamon
Place cake mix in a zip-type bag. Place topping mix in another bag and label “Topping Mix.” Staple bags together. Place bags into a ceramic/pottery mug that holds 1 1/2 cups liquid (no metallic decorations on cup).
Attach instructions to a gift tag on the handle of the cup:
Honeybun Coffee Cake
Empty bag of cake mix into the coffee cup. Add 2 teaspoons vegetable oil, 1 tablespoon water and 1 egg white. Stir very well. Sprinkle topping mix over batter. Microwave 2 minutes. Let cool 1 minute in cup.
Remove from cup and cut in half lengthwise. Serve immediately.

Crumb Coating
1-1/4 cups brown sugar
1-1/2 cups quick oats (not instant)
1-1/4 teaspoons cinnamon
9 tablespoons soft butter or margarine
Heat oven to 300 degrees. Mix thoroughly flour, baking powder and cinnamon. In another bowl, mix sugars with mixer. Add butter, eggs and vanilla, beat until well blended. Beat in apple butter and juice. Add flour mixture, chopped apples, raisins and nuts. Mix on low speed just until mixed. Refrigerate 30 minutes or until firm enough to shape. Crumb coating - mix sugar, oats, cinnamon. Add melted butter. Stir until moistened. Make balls and roll in coating - place on ungreased cookie sheet. Bake 24-26 minutes.

1 cup FRENCH’S® Reduced Sodium Worcestershire Sauce (30 % less Sodium) or FRENCH’S® Classic Worcestershire Sauce
1 tbsp. minced garlic
1 tbsp. minced fresh ginger 1 tbsp.
2 to 3 lbs boneless loin, round or flank steak
MIX Worcestershire, garlic and ginger in deep dish. Add steak. Refrigerate 30 min. or up to 3 hours. Drain steak.
GRILL steak over high heat about 15 min. for medium rare, turning once.
PLACE steak on serving plate; let steak rest 10 min. before slicing. Serve with additional Worcestershire on the side.

1 1/4 cup lime juice
2 cups cool whip
green food coloring
Mix milk lime juice and food coloring until combined. Pour into shell. Cool until set. Top with cool whip.

1/2 cup sour cream
1/2 cup + 2 tbs good grade mayonnaise or salad dressing

4 medium unpeeled red eating apples, cut into 1/4-inch slices and tossed w/1 tbsp lemon juice
2 cups tightly packed spinach leaves
Additional chopped walnuts
Makes 4 servings.
Line 4 plates with 1/2 cup each tightly packed spinach leaves.
Mound yogurt/apple mixture on top of spinach leaves and the sprinkle each plate with an additional 2 tablespoons chopped walnuts.

Zucchini Salad With Feta & Mint
2 lbs of small to medium zucchini
1 clove of garlic, minced
3 Tbsp. of chopped fresh mint (Yum!!)
1/3 cup extra-virgin olive oil
3 Tbsp. good red wine vinegar
salt/pepper to taste
crumbled Feta cheese
Rinse your zucchini and steam whole. From when your water has come to boil, steam for about 15 minutes or until just fork tender.
Carefully slice your zucchini into fork-sized medallions and place in a large bowl. Add a little salt, some pepper, garlic, olive oil, mint and Feta and toss to coat. Serve warm or cold.

3 cups water
2 cups flour
2 tsp salt
1/4 tsp Watkins Pepper
4 4 oz cube steaks
1-1/2 tbsp ground beef
1/4 cup flour
2 cups chicken broth (made from Watkins Chicken Soup Base)
2 cups milk
1/4 tsp salt
1/4 tsp Watkins Pepper
Put water in a medium bowl. Stir together flour, salt and pepper in another bowl. Dip steaks in water, then in flour mixture. Repeat. Lay coated steaks on a sheet of waxed paper and freeze for 3 hours. Deep fry at 350º 8-10 minutes. Drain on paper towels. Brown ground beef in a skillet. Stir in flour, then other ingredients. BAKER’S CHEESE (On the market, you may also find it under the name “cooking cheese” or “white cheese” or dry cottage cheese, such as ricotta.)
Following this recipe for the cheese is my recipe for “Milwaukee Cheesecake” along with some background on how I got into this cheese. Baker’s cheese is made from skimmed milk so it is a natural for powdered milk. This is the procedure for about a pound of cheese from a gallon of milk.
1. Mix up a gallon of milk from powder. I used one gallon of water and 388 grams powdered milk. Alternatively, use a gallon of 1% milk.
2. Heat to 90F and add 1/8 tsp EZAL culture or whatever you use as equivalent.
3. A few drops of rennet in 1/4 cup water is added to milk.
4. Let sit for 8 hrs if you can keep the temp at about 90F or overnight at room temp. Actual target is pH of 4.5 if you have a way to measure it.
5. Pour curds and whey into cheesecloth lined colander and then hang up to drain for 15 minutes.
6. Press bag lightly between boards and drain until “moist but not wet”. This take about

I also add nuts, raisins, shelled sunflower seeds or dried apricots snipped up Optional MIx butter and br sugar well. Add eggs and vanilla. Combine dry ingredients and add to creamed ones and mix well.
Drop by 1/4 C 4 inches apart on a cookie sheet. Make a well in the top and put a generous spoonful of jam in it.
Bake 350 16-20 minutes until edges are light brown- remove and cool.
I usually make a double recipe and freeze half for another show. I have also add other cereal like rice Krispies or grapenuts to it.

Nancy years ago I made these Breakfast Cookies because one of our girls had trouble getting up in the morning. I would enough stand her up in her bedroom and she was still asleep. With this problem I had to have something for her to eat before school. I didn’t want anything greasy so this is what I would use. She also at dinner would take a couple of bites of dinner and say she was through and she knew that she would not get anything until breakfast then I would give her the second recipe with a napkin and away she would go to school.
Breakfast Cookie
½ cup shortening
1 cup brown sugar
2 eggs
1 tablespoon milk
1 teaspoon vanilla
1¼ cup flour
½ teaspoon baking soda
¼ teaspoon salt
2 cups granola mix
Cream shortening and brown sugar. Add eggs, milk and vanilla; beat well. Mix together the flour, baking soda and salt. Add to sugar mixture. Stir in granola mix. Drop by spoonful on greased sheets. Bake at 350º for 10 to 12 minutes.
Susie’s Bisquick Breakfast Cookies
2 cup Bisquick baking mix
1 lb. sausage, all mild, hot or ½ hot-½ mild
12 oz. sharp shredded cheddar cheese
2/3 cup milk
Mix all ingredients together well. Do Not Cook Sausage Prior To Baking. Shape into 24 patties and place on greased cookie sheet. Bake for 20 minutes at 400º. Remove, drain on paper towel and serve hot or cold. Will keep well in covered container. Refrigerate. You can use turkey breakfast sausage or turkey Italian sausage work well in this.
Breakfast Cookies
2/3 c. lite pancake syrup
1/4 c. dark brown sugar, packed
3/4 c. smooth natural-style peanut butter
2 T. vanilla extract
1 large egg (omega 3 type)
1 T. egg substitute or egg white
3/4 c. whole-wheat flour
6 T. white flour
1/2 t. baking soda
1/4 t. salt
3/4 c. rolled oats
3/4 c. dried fruit such as raisins, currants, or dried cranberries
2 1/2 c. high-fiber toasted oat cereal rings (like Trader Joe’s Organic High Fiber O’s)
Preheat to 375. Coat 2 nonstick baking sheets w/baking spray. In large bowl, combine pancake syrup, brown sugar, peanut butter, vanilla, egg & egg sub. & beat on med. til smooth. In med. bowl, combine whole-wheat flour, white flour, baking soda, & salt w/whisk. Pour into bowl w/ peanut butter mixture, beat on low just until blended. Stir in oats & dried fruit & toasted oat cereal by hand w/ spatula.
Drop slightly heaping 1/4 c. dough per cookie onto sheets (6-7 per baking sheet; flatten to about 3/4 in. thick. Bake 10 min. or until lightly browned. Cool on sheet or wire rack. Store in sandwich bags at room temp. up to 2 days or in the freezer up to 2 mo.
Makes 12-14 jumbo breakfast cookies. 214 cal.

Breakfast Fruit Pizza
Makes 8 Servings
Crust:
1 cup quick cooking oatmeal
3 bananas
2 -1/2 cups raisin bran cereal
1 cup powdered milk
Topping:
1 (8 ounce) carton lite cream cheese
6 packets of artificial sweetener or sugar to your taste
1 teaspoon vanilla extract
4 Tablespoons fruit only orange marmalade or other fruit marmalade-jam
Use any of these of your choice:
2 cups sliced strawberries
1/2 cup sliced peaches
1/2 cup sliced or crushed unsweetened pineapple
1 medium sliced kiwi
20 black grapes- cut in halves
In medium size bowl, mash bananas, add powdered milk; mix until well blended. Mix in cereal, stir until blended. This will be sticky. Spray hands and a 12 inch pizza pan with cooking spray. Using hands and a fork, spread and press mixture evenly over pan . Bake for 12 to 15 minutes in 350 degree oven until lightly browned. Remove and allow to cool.
Spread cream cheese topping over cooled ‘pizza crust’ Top with fruit. May chilled for 25 to 30 minutes before serving, better if made and allowed to chill over night.
Makes 8 servings- approximately 240 calories per serving, 1 g Fat, 13 g. Protein, 44g Carb, 336 mg sodium

TNT Recipe -— Chocolate Chipper Cookie Mix in a Jar

Hi...
These cookies are baking in the oven right this minute!! The first batch came out and they are just great!! ....another one to put in my Mistletoe Marketplace! Who doesn’t like chocolate chip cookies!! This one is a keeper and will be great in Christmas baskets.
One tip———Be sure to use a wide mouth jar and really tap down each layer tightly....It is a very, very tight fit to get all the ingredients into the jar

Favorite Chocolate Chipper Cookie Mix
1/2 cup sugar
1/2 cup chopped pecans
1 cup semi-sweet chocolate chips
1 cup brown sugar, packed
2 1/2 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
In the order listed, layer the first 4 ingredients in a one-quart wide-mouth canning jar. Sift together the flour, baking soda and salt, add to canning jar; pack down tightly. Secure lid and tie on these directions:
Cream together 3/4 cup butter, one egg and one teaspoon vanilla. Stir in dry ingredients; blending well. Shape dough into one-inch balls and place on a lightly oiled baking sheet. Bake at 350 degrees for 12 to 15 minutes. Make approximately 3 dozen cookies.

2. TNT Recipe -— Holiday Cookies in a Jar

Hi...
I just tried these to see if I wanted to make them for my Mistletoe Marketplace.....well the answer is a definite YES! These cookies are really yummy and look so pretty in the jar. I just used regular colored M&Ms for my trial run because there are no holiday colors out yet, but they will be very festive looking with the holiday colored M&Ms.

Holiday Jar Cookies
1/4 c. sugar
1/2 c. packed brown sugar
1 1/2 c. all-purpose flour
1/4 tsp. baking powder
3/4 tsp. baking soda
1/2 c. Holiday M&M’s
1/2 c. rolled oats
1/2 c. regular (or Cocoa) Rice Krispies
1/2 c. white chocolate chips
Layer the ingredients in the order listed into a wide-mouthed quart canning jar, packing each layer firmly with a wooden spoon. Screw on lid and decorate jar top with fabric circle and twine. Hang a label around the jar neck with the following instructions:
To bake cookies, cream together 1/2 c. butter, 1/2 tsp. vanilla and 1 egg in a mixing bowl. Add the contents of the jar and stir until well-blended. Drop by rounded teaspoonfuls onto an ungreased baking sheet. Bake at 350 degrees for 10-12 minutes or until lightly browned.

3. TNT Recipe -— Turkey Medallions

Hi....
This recipe is one of our very old favorites! When my boys were little they really loved these....I remember once when Scott was maybe about 5 years old that he loved these so much he snuck some of the leftovers and hid them in his bed so he could have some later! He is now almost 25 years old so that tells you how old this recipe is!! I texted Scott on his phone yesterday and told him I saved some turkey medallions for him to take to bed with him! He got a kick out of that!!!

Turkey Medallions
1 lb. ground turkey
1/4 cup bread crumbs
1/2 tsp. fennel seed (optional)
1/2 tsp. ground sage
1/2 tsp. ground allspice
1 egg
salt
1/2 cup water
1 TBSP cooking or white wine
1 TBSP butter or margarine
In large bowl, mix turkey, bread crumbs, fennel, sage, allspice, egg and salt. With well floured hands, shape turkey mixture into small meatballs. With palm of hands, flatten balls into 1/4” thick patties.
In skillet over medium high heat in hot oil, cook turkey patties a few at a time until turkey loses its pink color and is throughly browned on both sides. Repeat with rest of patties and place on plate when browned.
Into drippings remaining in skillet, over medium low heat, stir in water, wine, butter and 1/4 tsp. salt, stirring to loosen brown bits in skillet.
Spoon turkey medallions into a 9x13 casserole dish. Top with pan drippings. Cover with lid or foil and bake at 350 for 30 minutes or until heated through.
