Ode To Ribs

The waitress says
the man at Table Three
is making noises.

You’d think she would be used to grunting
when the sun goes down
at Melvin’s Rib Château,

but this one’s whispering amen
into his marinade,
getting sauce all over his Armani.

It could be
he’s an escapee
from a gated community

of tofu burgers and arugula,
having succeeded his way
into a milieu

of Pilates and Lipitor.
Now he’s speaking in tongues,
saying, Bring me

another slab of mastodon,
in Aramaic.
It is the sound of

a biblical digging-down.
A rescue mission
of smoked pig and Budweiser.

Trying to find out
if his inner philistine
still has an appetite.

Looking at this..the above sounds like me!!! LOLOL The messier the better....
with some equally messy corn on the cob dripping with butta!! YYUUUUUUMMMMM!!!!

Please be clear on one point. ONLY Texans know how to prepare ribs.

Go to any half way decent Rib Joint in DFW and the beautifully smoked, dry rubbed ribs cooked to perfection are a billion times better than the sauce dripping crap found in St. Louis.

So.. in conclusion.. if you want good ribs or any other kind of BBQ please just come to Texas. No one else has ANY clue as to how to do BBQ.

Learning to cook good ribs is not a singular skill. It is a progression, a journey of experience, trial and error. Lots of failures before you get it right. To many men in the south it is more of a right of passage than simply cooking.

To help others, I have learned that ribs are cooked best in three stages:

Marinade
Slow cook in a dry roaster
Grill with sauce or rub

Last July overheard on a bus in San Francisco of all places, a young girl talking on her cell phone, she said “and tell him I want some ribs and real meat on the barbecue this time, no tofu burgers”.

Down here in Texas, Brisket is king. But, there is nothing better than a slab of baby-backs, and a big ear of corn-on-the-cobb with butter and red-pepper.

shabby chique....that’s the brother and sister team that made very well crafter plans to create what appears to be a shack...don’t be fooled, it is a well crafted, wall-street type, business plan, that is working.

Beef ribs are not “RIBS”. Only pork ribs will do.
