My family is on a pinto bean diet, i'll call it that because money tight and this is all we have to eat, well rice, and homemade tortillas, but even those few inbetween times we can have eggs, cheese, fruit, vegtables, it's mostly beans, i make plain, and chili version, leftovers become soup, my kids think we are going to die, what i'd like to hear is what someone else thinks?
I thought VX was what you got if you mixed chips made from corn with Guacamole.

I mentioned this meal to my wife just last week. My grandfather very much liked to eat a tall glass of cornbread and milk, salt and pepper. There was also cornbread and butter milk. These memories were from the 50’s well after the depression and the war.
On the subject of beans, there can be variety. My favorite growing up were white beans, Navy Beans. I have come to like Black beans with a littl jalapeno and cumin.
All the above go with cornbread.
I am the cornbread chef at our house. My specailty is Martha White Sweet Yellow from the mix. It is more expensive than purely from scratch, but buying two or 4 at a time with the supermarket discount card is fairly reasonable. It is out standingly delicious
Sure but who does that? Nobody. It gets thrown away.

I love to cook all that stuff, but after only a few days, my husband goes bonkers and buys hugh dead pieces of meat! If he would take that job in Saudi Arabia for six months, we could cut the grocery bill to almost nothing (and my 15-year-old would leave home, for an extra savings ;-).
Don’t forget potatos, pasta, and noodles/powder/water/meat.
Peruvian beans and Anasazi beans are very good also but they cost a little more.
My husband gets antsy being fed nothing but beans too, so we alternate meat dishes. Chinese dumplings, yakisoba, spaghetti sauce, chinese chicken over rice...He feels like he’s getting manly meat dishes, but I only use a pound for the six of us so it’s a lot less than he imagines. :-P

Beans and rice do provide all the essential proteins necessary. Grew up dirt poor with pintos and cornbread. It is my second favorite meal after steak. I am not sure the squash would have the necessary amino acid complex that rice has. Beans and rice for sure. Praying for your family.
Yes! My grandmother used to make us jalapeno cornbread, black eyed peas (or pintos) with a bit of ham hock and served it with fresh sliced green onion & tomato from the garden. Talk about good eatin’!
I was surprised it took so long for someone to mention pasta. It can be bought in bulk very inexpensively. If you are able to plant a garden please do so; this is the perfect time to start. If you have no garden area available consider growing fresh herbs (like basil) in a flower pot. You can grow cherry or grape tomatoes this way, too. Fresh herbs and tomatoes really make a meal delicious and are good for you too. Bitter greens like dandelion leaves are sold in uppity grocery stores like Whole Foods but are available for free in most climates. Just look in the yard or the park! Use like spinach.
Pintos are the cause of the cheapest form of entertainment on earth. Prrrrrrt! And they taste great, too. Seriously, can you grow a veggie garden?
