My family is on a pinto bean diet, i'll call it that because money tight and this is all we have to eat, well rice, and homemade tortillas, but even those few inbetween times we can have eggs, cheese, fruit, vegtables, it's mostly beans, i make plain, and chili version, leftovers become soup, my kids think we are going to die, what i'd like to hear is what someone else thinks?

Enchilada sauce:
1/4 cup vegetable oil
2 tablespoons flour
1/4 cup chili powder (2 TBS if your kids dont like it hot)
1 (8 ounce) can tomato sauce
1 1/2 cups water
1/4 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon onion salt
salt to taste
Heat oil in a skillet over medium-high heat. Stir in flour and chili powder, reduce heat to medium, and cook until lightly brown, stirring constantly to prevent burning flour. This takes about 30 seconds.
Gradually stir in tomato sauce, water, cumin, garlic powder, and onion salt into the flour and chili powder until smooth, and continue cooking over medium heat approximately 10 minutes, or until thickened slightly. Season to taste with salt.

Pinto beans, like any other bean, are part of a “sound” diet.

I recently discovered something... LOL... I had an utter disaster on my hands in the kitchen.
I was very preoccupied last month, and one of the many things that I was multi-tasking was to make mashed potatoes and freeze it, as small individual servings. I'd found a 25 pound bag of potatoes clearance priced at the store, and had to get the older ones cooked up pronto.
At some point... for reasons I know not why... instead of grabbing the potato masher, I grabbed the electric eggbeater.
Even worse... I'd been so busy I hadn't noticed that the half dozen boiled potatoes sitting in a large bowl with about a cup of milk and 2 Tablespoons of butter -- were all cooled off, no longer hot.

Recipe for a disaster!!
I turned on the hand mixer, and immediately realized something was "wrong," LOL, everything was chilled, not at all even warm, and then it dawned on me, that I was trying to whip up COLD potatoes which, worse yet, hadn't first been thoroughly mashed, which just doesn't work.
I should have stopped then & there and thrown away the dreary muck, but instead I added cold milk.
This stuff whipped into a GLUE like mess that climbed the beaters, threatening to attack the cook, but I perservered.
Anyway, realizing that I had a huge bowl of cold potato gruel, flecked with LOTS & lots & lots of lumps, I still didn't give up, even though I do know that there is NO way to "repair" such a concoction back into edible mashed potatoes.
Anyway, I happened to have a pan of bacon grease already on the stove, so I turned up the heat; then I grabbed a box of instant potato flakes - I poured a little into a small bowl and shook several spices onto them - then I poured a bit of the mash-potato-mess into the bowl, and with my hands I formed a patty.
I fried it in hot bacon grease, and it was DELECTABLE, just perfect, and the LUMPS improved the final product, because every once in a while you'd bite into a chunk of plain un-spicy tater.
In the future when I have leftover mashed potatoes, I'll see if I can replicate this by turning the mashed potatoes into a milky gruel, whip them up a bit into "gluey" consistency -- and then forming patties with spiced up instant potato flakes from the box.
I've NEVER been able to make a decent potato patty before this recent kitchen disaster, LOL
Next time though, I'll try greasing my hands before forming the patties, as the potato GLUE really sticks to the hands. The very worst gooey mess I've ever encountered in the kichen.
