Ramsay's rating a recipe for disaster (for you foodies out in FreeperLand)

WHEN the quietly spoken Danish chef Rene Redzepi stood before a Melbourne audience last month and said he considered the S.Pellegrino World's 50 Best Restaurants list more valuable to his business than even the hallowed European Michelin Guide, little did he know Noma, his Copenhagen eatery, was about to be elevated from No.10 to No.3 in the latest rankings, announced this week.

Good times ahead for the Dane.

But this year the real intrigue was not in the elevations or inclusions to the exalted list but the deletions. For the first time since the list began in 2002, Gordon Ramsay is nowhere to be seen. His signature Chelsea Restaurant Gordon Ramsay has been dropped by the award's juries like a hot potato, while only one other Ramsay restaurant, the London branch of his Maze franchise, made the top 100, at 91.

Gordon was entertaining at first but now it's the same ol bs from him and Hell's Kitchen is so highly scripted (no duh there) that it's just no longer fresh. Besides, he sits there and complains to the chefs that they are so slow yet takes 10 minutes to continue to berate them thus slowing them down even further.

It's no wonder why he alienates everyone around him. The guy is absolutely an arrogant c*nt, as the Brit's like to say. He needs to get back into the kitchen and stop trying to be a tv attn ho.

I watched that show once. I couldn’t believe nobody kicked his ass, or at least left in disgust. It must be totall fake.

the show is highly scripted. Heck, they always make the same dishes...Beef Wellington, John Dory (which I have never had nor seen on a menu) with scallops, etc. You’d think they would mix it up from season to season.

When you are an aspiring chef, you nod your head and take the heat. And I am surprised no one has attempted to kick his ass.

And while British newspapers have done well with Ramsay's business affairs, it is nothing compared with the field day they had with his personal life following revelations last year of an alleged extramarital affair with Sarah Symonds, who claims to have had a seven-year affair with the chef.

The BBC did a special on him back in 99 called Boiling Point just after he left Aubergine. It’s very telling to see how big his ego is and the idiotic things he does on camera. I am convinced he does this all to get attention to help build his empire. But, there is a point where it will back fire and I think it has.

Besides, high end cooking is like the art world. It’s filled by arrogant idiots who find pleasure in food that most of us would never touch. On top of that, they pay out the nose for little portions that look nice. I don’t care what the food looks like on the plate as long is it’s good.

while you are right that he has serious temper tantrum problems, you have to remember that the entire staff of Aubergine defected with him to his restaurant. While he is a donkey himself, those that work with him know that he is their ticket to better things as he is typically loyal to his workers that work hard and show initiative. It’s also been said that he learned his abusive ways from chef Marco Pierre White.

I once heard him state his age on an episode and I couldn’t believe it - he is now 42. He looks way older to me - lots of wrinkles and creases on his face.

Expensive, time consuming, pretentious restaurants seem superfluous to me now.

I like good food, good ingredients, good wine, but I'm content to stay at home, grill or roast something, make some basmati rice or a nice potato dish and a good salad with a simple vinaigrette made with a good oil and save $100 or more for an extravagant dinner out.

Who's got the time to eat out? (excluding a fast inexpensive lunch)

And may I add:.....

I’m tired of paying $40 for a $10 bottle of wine.

Have a “modest” bottle of wine at home and get a better entree for less $.

Learn a little bit about sauces and marinades and you can make an ordinary entree into something pretty nice for not a whole of money.

I agree...again, if you find the Boiling Point clips on youtube, he definitely has a younger appearance. could be he’s so animated with different facial expressions that it has made him look older. Besides, the guy is always under stress.

Personally, I’m still very entertained by his shows (HK and KN...I don’t like that “F” Word show). His arrogance, to me, remains refreshing as I watch the “wussification” of just about everything and everybody else.

when it comes to sauces, one has to be patient, especially if you need to reduce it. most people don’t have that type of patience in the kitchen.

best tv show to find out great places to eat across the country is

Diners, Drive-ins and Dives on Food Tv even though Guy can become quite irritating with his mannerisms as many Food Tv hosts do. Have they ever tried something they hate? Everything is great to them.

You’re right. I’ve got a friend who is a very good cook who takes days to make stock sometimes. Starts with a very large pot and works his way down to a small one. Then he freezes some of the stock in cubes and uses those one at a time with some meals.

I was referring to fairly quick simple sauces so you don’t wind up with dry food.

Overcooking meat, fish and fowl is a major sin to me.

It seems that I am usually let down when I eat out at expensive restaurants. I always leave knowing I could have prepared it much better at home for a fraction of the price.

High end restaurants in the area I live popped up everywhere from about 2002 to 2007, then when the economy stagnated allot of them started closing.

That reminds me, has anyone seen any of Marco Pierre White's youtube vids of him going off like Ramsay does? I have yet to see any. White does do some extraordinary things but I have yet to see him explode.

I’ve seen him rip apart other chefs so I knew he wouldn’t be making friends anytime soon.

The thing that got me about him was that he made a big deal over his father’s many affairs and how it hurt his mother. He said he would never do that to his wife.
