Mostly we eat steak, beef ribs, fried chicken, fried pork chops, tacos, and enchiladas. I fail to see a problem.

After 20ish years those items start to become boring.

Problem is, including seafood, your list covers about everything in terms of type. So my guess is that you need to start thinking about differenct methods of preparation for the food you do eat.
So instead of fried chicken, you need to start thinking chicken pasta or stir-fry chicken or chicken over salad, etc. See what I mean?

Chicken and Wild Rice
Chicken, either a whole one or your favorite parts.
Boil the chicken with salt and pepper until it’s very tender.
Remove the chicken from the water and set aside to cool.
Wild Rice, Uncle Ben’s or similar variety. One box for a couple, two boxes for more family if needed.
Cook the wild rice in the chicken broth, assure you have enough water, add more if needed.
Remove chicken from the bones, dice and mix with the wild rice.
Variations: While the chicken is cooking, prepare diced celery, onions and mushrooms all chopped up, saute with butter, mix in with rice and chicken.
Very filling, a little goes a long way, one of my favorites for thirty years of marriage.

I don’t have the recipe handy, but you can Google up something called “Roosevelt Beans”, from the menu of the Roosevelt Lodge at Yellowstone. If it was good enough for Teddy...

Slow cooker (crock pot) + tri-tip roast (~2-3 lbs.) + a small onion + 2 cups water + 1 1/2 tsp. Kitchen Bouquet + 6-8 hours = meal. Throw in some taters and carrots a couple of hours before it’s done and you’re laffin’. Pull apart the leftover roast to make shredded beef. Combine with Old El Paso Taco Mix (40% sodium reduced) and a little water, pile in a tortilla, combine with cheese, sauce, etc. Ta-da! There’s a couple of meals right there!
