Thank you. The photo I took of the Black Phoebe could have been better if I didn't have to zoom in so close to get it. On top of that, I had to hurry before the dogs discovered it sitting on the fence and chased it off....which they did right after that shot was taken. *sigh*
The jays are so easy to photograph, they have no fear of me or the camera or the dogs. In fact, when I was trying to get a photo of the Phoebe, the jay flew up to me and posed on the fence as if to say...."what about me? You DO want a photo of me too, right?"

...I am still all messed up on sleeping schedule and will be up tonight in the wee hours watching mens basketball finals..The wee hours have become my afternoon.. The Olympics will end and hopefully I can get my self semi normal again. LOL

Spiced Peach Pie
For filling:
2 (12-ounce) bags frozen peach slices
1/2 cup brown sugar
1/2 cup sugar
1/4 cup instant tapioca
2 tablespoons crystalized ginger, finely chopped
1/2 teaspoon ground cinnamon
For crust:
1 (11-ounces) box pie crust mix
1/3 cup plus 1 tablespoon peach nectar, chilled, divided
1 egg
2 tablespoons coarse sugar, for dusting, optional
Preheat oven to 400 degrees F.
For filling:
In a medium bowl, stir to combine all filling ingredients. Set aside for 15 minutes.
For crust:
In a large bowl, stir together pie crust mix and 1/3 cup chilled peach nectar until dough forms a ball. Split dough in half, and form into 2 disks.
On a lightly floured surface, use a rolling pin to roll dough 1 1/2-inches larger than an upside-down 9-inch pie pan. Fold dough in half and unfold over pie pan. Press onto bottom of pan.
Fill pie shell with peach filling mixture; set aside.
Roll out remaining dough and place over filled pie shell. Pinch the edges of the pie together or crimp with a fork. Trim away any excess dough.
Lightly beat egg with 1 tablespoon peach nectar or water to make egg wash. Use a pastry brush to lightly brush top of pie with egg wash. Sprinkle with sugar. Cut slit in center to vent pie.
Bake in preheated oven for 45 to 60 minutes or until crust is golden and filling is bubbling through vent. If edges get too brown, cover edges with foil to prevent burning.
Cool before slicing.
Chocolate Waffle
Ingredients:
7 ounces all-purpose flour, approximately 1 1/2 cups
1 3/4 ounces sugar, approximately 3 tablespoons
1.5 ounces cocoa powder, approximately 1/2 cup
1 teaspoon baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3 whole eggs, beaten
2 ounces unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
16 ounces buttermilk, room temperature
4 ounces chocolate chips, approximately 3/4 cup
Vegetable spray, for waffle iron
Directions:
Preheat waffle iron according to manufacturer's directions.
In a medium bowl whisk together the flour, sugar, cocoa powder, baking powder, salt, and baking soda. In another bowl beat together the eggs and melted butter and vanilla, and then add the buttermilk.
Add the wet ingredients to the dry and stir in the chocolate chips just until combined. Allow to rest for 5 minutes.
Ladle the recommended amount of waffle batter onto the center of the iron. Close the iron top and cook until the waffle is crispy on both sides and is easily removed from iron.
Serve immediately or keep warm in a 200 degree F oven until ready to serve.
