I just looked up the values for a pound of beef liver on the USDA database. I'd been worried about eating it, because I thought it was too high in cholesterol. But you know the thinking is that cholesterol isn't the culprit in high cholesterol in humans...it's saturated fat! I found that a pound of pan-fried liver only has 5.5g of saturated fat! I ate it in two meals, so that's not very much per meal, sis!
And then there's this...you know I have trouble with anemia...this pound of liver had 22mg of iron in it!
So I feel like I can eat it without too much guilt and besides, I love it! And it's cheap! The whole pound cost $1.88!
Yup, it's cheap. Cuz most humans don't like eating organs.
I'm glad you love it! The very idea of eating liver revolts me. At least, though my mother made us eat things like fish, she never forced organs down our throats.
