"He said if I don't like the sign, maybe this is not the place for me." Not a bad response, in my opinion. If enough people take their business elsewhere then the market will have spoken and the owner will either change his decor or go out of business.
And if the signs do not noticeably effect business, then the market will also have spoken, and maybe that business is NOT the place for her overly sensitive self.
