we’re all TRYING to be health conscious, but good food
and great tastes sometimes hinder our efforts. Am I right?
Good food is irresistible.
Do you want a twist on coleslaw? Get the premade shredded stuff, find some Brianna’s poppyseed dressing (with shelf stable salad dressings), add a dab of apple cider vinegar, some chopped Craisins, and some sliced or chopped almonds. Works with BBQ, and is a quick change up. Add the almonds at the very end after the other ingredients have “gotten to know each other”.

Today I had:
Fried Chicken thighs for breakfast.
Chili for lunch.
Cooking pizza 🍕 for dinner...

P.S. We had mostly leftovers today.
Spinach artichoke quiche for breakfast, store bought premade.
Leftover ham, collards, with black-eyed peas for late lunch.
Leftover chicken lettuce wraps (PF Chang copycat) with steamed edamame pods as a side.
I had to use up these leftovers before they weren’t good anymore. Mission accomplished!
Back to full on home cooking tomorrow! Sneak peek for tomorrow’s menu, Marry-Me-Chicken! Tomorrow we celebrate 46 years of being together! (We were kids, but it was love at first sight when we met each other!)
Thanks - will give that a try in the future. I don’t have the poppyseed dressing & I am not going back to the store in the morning.
We finally found a BBQ we like just outside of Big Town so on the last trip, we bought 2 lbs. to freeze for a quick & easy meal such as tomorrow’s lunch. We will definitely be serving BBQ again & I will try your coleslaw recipe - sounds good!
It’s not my homemade version, but it works nicely as a backup. Have fun tomorrow, and then take a break!
Tuesday is a day off. Headed to Old Town Wednesday for my brother’s retirement party (5-6 hours travel round trip). Thursday we get haircuts & make a trip to Big Town for various errands. Friday is a day off. Saturday is another trip to Old Town for a friend’s 90th birthday party. Very little rest for the weary this coming week.
True dat! When it gets right down to brass tacks, I’d rather croak fat and happy, than miserable in a perfect hardbody. :-)

Being in the Midwest, my BFFs and I have our recipe that always garners marriage proposals:

Congrats on 46 years! We started ‘dating’ when we were both 50, ‘engaged’ at 55 and so we’re hoping for 35-40 years together. Other than when my boys were little, these years with Beau have been the best years of my life so far. An adventure a week out here on the farm, for sure. ;)
I have discovered in the last couple of days that kefir can substitute 1:1 for buttermilk & sour cream in recipes for baking, dips & dressings. Being runnier, it’s not a good substitute for thick toppings.
But wait, you say ... isn’t kefir made from milk & would aggravate lactose intolerance? The good news:
“The fermentation process significantly reduces lactose levels, with most commercial and traditionally made kefir products being up to 99% lactose-free.
Studies have shown that kefir can improve lactose digestion and tolerance in adults with lactose maldigestion, potentially due to the probiotic cultures that modify gut microbiota and enhance the body’s ability to process lactose.
Some research even indicates that regular consumption of kefir may lead to improved lactose tolerance over time.”
So far, I have used kefir in place of buttermilk in apple cobbler dough & used it this morning in place of sour cream in the coleslaw recipe I use. I have been drinking small amounts daily without negative results to try to improve my microbiome. It’s very helpful to have kefir as a substitute for buttermilk & sour cream!
Your on the fly meals are amazing.
After having to watch every MORSEL of food that went into my ‘curvaceous’ body during my Army Years, I no longer care. I could be thinner, but again, I don’t care! I gave the Army the skinniest years of my life!
My plan is to have a mild ‘heart event’ at age 70, THEN start running Marathons, again. So, I have another 5 years to goof off, LOL!

I was lucky enough to get the solar version - very little to no maintenance required, only cleaning. I wasn’t aware there was a battery one.
My family got me a rechargeable Ring system for my front door - HUGE pain. Used it a couple of time, had to be recharged constantly - it took four rechargeable batteries that lasted a very short time. I stopped using it after the second recharge.
I’ll have to share this with my little sister. She may already know it, but maybe not!
I’m glad I didn’t inherit that. I eat a lot of cheese.
It’s very helpful to sub kefir for buttermilk & sour cream! I sub kefir for buttermilk in apple cobbler dough & for sour cream in my coleslaw recipe. I drink small amounts daily without negative results to try to improve my microbiome.
