How to eat pesto:
1. Throw it in the trash.
It all looks good except for the sweet potatoes, they will spike your blood sugar, and so will whatever wraps the enchiladas unless they are keto.
Way too much chicken on that list. Don’t be afraid of the fat. It’s the fat you need, not the protein.
Tonight it’s prime ribeye in umami marinade.
Tomorrow its venison Bourgogne.

I saute the kale with pesto and lots of butter. The butter allows the mess to slide easily into the trash.
Sweet potatoes have the lowest glycemic index rating of any tuber. If you boil them, the GI is significant low. They’re one of the best starches for a moderate diet.
