The PB&J is as American as it gets, and its story is spread across the internet from web page to web page as if by digital butter knife, each as recognizable to the next as the sandwich itself. I'll spare you too much of a regurgitation here, except in the broadest strokes: It supposedly started as a fancy-ish tea sandwich at the turn of the 20th century, but quickly became a popular lunchtime snack as an increasingly industrialized food system made sliced bread and store-bought jam and peanut butter a common and affordable option to Americans of all economic stripes

Well I traded my baloney for a PB&J at lunch. My first venture into business.
Growing up, my mom made me so many “choke and slides” to have for school lunch, I’ve never wanted either one since. Lol!
Baloney however......isn’t worth consuming unless fried....anyone who hasn’t tried that is missing one of the greatest unhealthy treats of all time. 😁
Bologna and cheese on white bread was my summer diet, as I was a latch-key kid growing up. Coins under the sofa cushions offered an occasional pack of Yodels Cakes during a bike venture.
Fried baloney with mustard on white bread 🍞🥪
Regular baloney on white bread 🍞 🥪🥪 with mayonnaise (had 2 half sandwiches this morning) - add some plain potato chips between the mayonnaise and the bread 🍞

Watching Guy Fieri’s Grocery Games tv show, I’ve seen world class chefs incorporate fried baloney into their dish on several occasions....that says a lot IMO.
Fond memories of PB&Js dipped into hot chocolate on a deer stand and in the duck blind.

We have people here who went to school even before they had air conditioning, yet none died from home packed lunches that had everything in them from bologna to chicken legs, I assume tuna sandwiches and all kinds of stuff that sat in a paper bag for 4 or 5 hours with zero concern of keeping cool.

Peanut butter, bacon and pickles. Don’t knock it....

You might like this:
In a frying pan on a medium heat:
1/4 onion, grilled in butter until cooked but not caramelized.
1/4 pound of baloney, diced, added in with the onions. Sautee until some brown shows on the baloney.
Add spices as desired.
I like a dash of sea salt, black pepper, and oregano.
Add six eggs to the mixture and cook until ready.
Serve as a scramble and garnish with sour cream, guacamole, and/or orange slices.
Serves four normal people and two or three hungry people.

I tried the Spam commercial BUT you need a really hot skillet and a quick sear
If you let it reduce, it’s way too salty - oops
Same thing happens with ham
Diced the spam, fried it, a pinch of ginger, a couple packages of soy from the Chinese restaurant, half a bottle of Teriyaki Sauce, a couple of spoonfuls of white sugar, and even a bit of regular ketchup to try and even it out
Oh yeah, had a bit of diced frozen carrots that I had already cooked - threw about a half a cup in there too (sweetness from the carrots to offset the saltiness)
Frozen peas (which I once hated) microwaved and then mixed into the white rice - frozen peas work the best in this situation
I got about 5-6 small meals out of it - maybe $6-$8 worth of food - maybe $9
I’m cheap
I don’t hate PB&J.
But I much prefer EITHER:
Butter with Peanut Butter, OR:
Butter with Jelly/Preserves
And never ate baloney.
Our go to lunch meat was the chipped/razor thin sliced beef from Budding. That was a staple all through my youth and into adulthood.

Especially with thick slided baloney and a thick slice of white onion. (Don’t forget the mayo.)
I have half a PBJ every night with a glass of milk. Can’t beat it.
My favorite PBJ tradition:
Spread PB on white bread, microwave for 10-15 seconds, spread cold strawberry jam on top and enjoy hot/cold, saltyish/sweet all in one bite.
Sometimes the ggg catalog has to spread out a little. /rimshot

Tuna and nacho cheese doritos is very good too. Very crunchy.
