CB, does your DH have a big green egg? You can cook amazing pizzas on those!
Years (decades) ago, I tried to build a pizza oven. I used fire bricks for the base, chicken wire and adobe (sort of) for the top. It worked for a bit then fell apart as the GA adobe attempt fell apart đ. It was fun to do tho
The reason for specific pizza oven are temps that can be achieved. 900â1000. One can of course cook other things at lower temps
DH cooks us pizza on 500-600 degrees on his BGE and it is amazing
DH says you can get the egg up to 1,000 but he is not comfortable with that

Of putting I a crafted Neapolitan pizza at 600 degrees. They make their crust with specific hydration . The hot/quick oven is part of it. They also donât whip out the dough and bake. often 48 hours for proper fermentation
These are serious hobbiest -not restaurant owners!
So you cotton n I could do fine with500-600 but the professional type ovens have a genuine market
