There's no bad time for comfort food, and it's hard to think of any meal (or snack!) that's as quick and satisfying as a crunchy, gooey grilled cheese sandwich.

The good news is that you can use any cheese you like for your grilled cheese. If it's your favorite, give it a go!

Half sharp yellow cheddar, half Monterey Jack.
On good Jewish rye, fried in a frying pan in no salt butter, with a large slice of tomato.
Avocado is an optional possibility.

7. The best American cheese, and cheese for an grilled sandwich, is Land O Lakes. Great taste and texture.

For Swiss, only Finlandia Regular or even their reduced fat version. Great nutty flavor and texture.

For a sub, try adding Smoked Gouda. Publix store featured a turkey, whole cranberry sauce, smoked gouda, mayo, lettuce and tomato sub, heated. Heavenly!

For a mixed grilled cheese sandwich, you can use a mixed LOL yellow American cheese and Boar’s Head white Vermont cheddar. Cold or grilled, heavenly. Hellman’s mayo is the best for sandwiches.

“Where do you get Government Cheese these days?”

I haven’t had it in almost 40 years. My grandmother used to receive it monthly, I think. She would then give it to us grandchildren. I was especially grateful to have it because back then, I was hungry and poor.

"... a good grilled cheese sandwich on a cold afternoon. ..."

And don't forget the bowl of tomato soup.
Campbells is fine, but Progresso tomato & basil is better.

I guess if your recipe is for a “broiled and microwaved cheese sandwich” …
Instead of a grilled cheese sandwich, that’s OK.

“The #1 best (if you disagree, you are exercising your right to be wrong) cheese for grilled cheese sandwiches is Extra Sharp Cheddar.”

I don’t disagree.

I do Swiss cheese and sliced ham on wheat bread. Sometimes add a spinach leaf.
I eat my Avocado and tomato separate.
I don’t like cooked fruit generally speaking.

Wisconsinite weighing in. We know cheeese! Extra sharp cheddar OR brick are excellent but you have to cook your sandwich slow enough so they melt all the way through. And use butter on the bread, not oil or mayo!

Swiss, that was my encryption, but not any Swiss will do, it has to be the dry aged one that when you cut it, nearly hard as Parmesan.

Sometimes I smear them with horseradish spread. Most of the time just on the buttered crust.

Sometimes I do make them with pickles with the Swiss. Those are good too.

Last night I made split pea soup with ham. I made toasted English muffins. My husband got cream cheese & I had butter & blue cheese on mine. Delicious.

Oh good God.

Grilled cheese means American cheese, period.

Maybe you can get away with velveeta, but it has to be a soft gooey sticky cheese byproduct.

Venezuelan beaver cheese. Absolutely the best cheese for grilled cheese. Hard to find but well worth the search.

LOL. I’m picturing the warehouse scene in Raiders of the Last Ark but...with cheese! Acres and acres of cheese.

I’ve heard good things about government cheese for years but have never had a chance to try it. In fact I’ve never even seen it or its packaging before.

I’ve had a few times when on call that I had to head out on a moment’s notice but I was starving. My go-to sandwich when that happens is to put two pieces of rye in the toaster while I cut a thin slice of some well aged Mennonite smoked summer sausage and a nice fat slice of very sharp cheddar. The second the toaster pops, the sandwich is assembled and then popped in the microwave for about 15 seconds.... and with it wrapped in a paper towel and an apple in hand, I’m out the door and gone. Could I make it better with a bit more time... sure but from start to finish, this only takes about 2 minutes.
