Here in SE Alaska the water temperature is a constant 40 degrees. Nice and cool in a locker below the waterline. Similarly in NW Washington, during Winter of course, the freezer is just a milk crate outside in the cockpit.

The passage between the mainland and the islands can run well over a month in our boat. That is more of a challenge for the First Mate/Galley slave, Freeper Patriotic Rose. She manages to have fresh veggies out to two weeks at sea and things like onions, acorn squash and yams over a month. Supplement with cans and freeze dried stuff. Wouldn't want to go much over 8 weeks (But we could. MUCH over 8 weeks).
The techniques are well known to Old School cruising sailors. We are not exactly "Preppers" unless you consider being prepared to be out of sight of land for a couple of months and doing it several times.

I need to get busy canning stuff, but that is SO much work, and since I can still buy canned goods, I keep putting it off.
I can reveal one priceless thing I've learned recently. When you buy fruit like blueberries or cherries, rinse them when you get home and store them in glass quart Mason jars with a loosely tightened 2-piece lid. Blueberries have been lasting up to three weeks like this. I'm still munching on a batch of Rainier cherries that I bought 10 days ago and still are totally fresh. I hate throwing out spoiled, moldy or withered fruit, so this has been a very valuable tip for me.

Dh got a small freezer not long ago. We freeze butter, milk and some frozen vegetables and fruit (like blueberries) which I am not fond of but are better than nothing. We use a lot of milk and it freezes well.
Union Pacific ordered a company which ships an additive necessary for diesel trucks to satisfy EPA emission requirements (it’s not added to the diesel, but the exhaust),
to cut the number of tank cars shipping their additive BY HALF.
A couple of companies (I can’t recall which) have announced they will be cutting back their shipments of some foodstuffs to California and Washington, since the costs are getting too high.
One almost suspects they are doing this on purpose.

In my smaller freezer in the kitchen, I fill the top drawer with smoothie berry packets, soups and chilis that I freeze in cubes and store in quart bags. In the lower drawer, I move meats from the outdoor freezer that are next in line to be used, and then I keep an assortment of "convenience" frozen foods, like Trader Joe's Mandarin Ginger Chicken, Pad Thai noodles, frozen pizzas, etc. I try not to fill up my freezer with expensive one-meal stuff like that, but I do have a little bit of it. (And if you haven't tried the Mandarin Chicken tossed with roasted cauliflower, you're missing something!)
Another thing I learned during the 2020 trial run is that large blocks of cheese that are packed in wax and stored in the back of the fridge will last for two years... I just opened a block of Tillamook cheddar that I bought in March 2020 so I could see what sort of shape it was in, and it was perfect.

Another thing I did during the lockdowns was stock up on powdered dairy products: butter powder, sour cream, buttermilk, heavy cream powders. I bought them on amazon and the buttermilk powder has been great to have on hand for making muffins and other bakery goods.
A deep freezr is great until the electricity goes out!
Then I get to see how many Pork Pies can be saved from the rubbish 😮
I vacuum seal and freeze. By far the best vacuum sealer I’ve ever owned is a small hand-held FoodSaver unit. Cost me less than $40. You have to buy the bags though. But the system is flawless and nothing to break like the seals on the large units.
