I have the same symptoms after not getting my shot.
I can think of a lot of reasons, just 4 of which are:
Individuals' immune responses vary greatly. Most people, as happened with you, do not fall severely behind a COVID-19 infection's ability to "explode past the defenses". But, unfortunately, enough do to be a serious problem. The vaccine, on the other hand, is a controlled quantity -- it can't actually reproduce (potentially explosively). So, the dosage is sized to cause the desired fairly strong immune reaction (which can have unpleasant symptoms for some), but it is not so strong as to be dangerous, and it is "controlled" to a large degree because antagonist can not reproduce like a real virus.
Your normal body cycles.
What the viral load you were exposed to was.
VERY often the response by a healthy body's immune system to a "second invasion" is stronger than the 1st go-round. This is frequently seen with pathogens, allergies, and, in fact, in most cases with 2nd shots of the Pfizer and Moderna COVID-19 vaccine, compared to the 1st shot.

Good job on that. It’s quite difficult to prevent spread in many normal home situations, esp. if the initial spreader becomes contagious before realizing they are ill.

I totally agree with you. We don’t even have much in the way of animal trials. Research on a prospective veterinary cv vaccine, in fact, was stopped when the lab animal recipients died (when they were exposed to a new cv strain ) and their immune systems overreacted with cytokine storms (most likely).
If you were exposed and recovered, why in the world would you get the shot?
After my flu experience I’m done with vaccines or trusting anything from big pharma.
I was an experimental pin cushion for those a-holes for 20 years in the military. Enough is enough.
Now that you’ve had your second shot make sure to keep wearing your mask. Keep social distancing. Don’t leave the house. Don’t go to restaurants. Don’t visit friends and family. Don’t go to the store. Don’t even look out the windows or you’re doomed. Fauci says so
that is frustrating. If you get moderna and get the first shot just as you leave and get the second immediately on arrival back it should work but i’m sure that’s not easy to set up
