Beans aren't inherently gassy, it is damaged protein from over-cooking that causes the unintended effects. Minimize cooking damage by most efficiently processing beans. It takes a cheap "corn mill" and a pressure-cooker.
Cracking un-washed beans in a kind of dry grain mill for "meal" not "flour", then washing them after cracking, soaking in hot water for a short time, then pressure cooking. The taste is like potatoes, the most gas-prone person won't experience the unpleasant effects.
The cheapest, steel-plate (vs. stone), "meal" (vs. "flour") mill, that will process whole corn, dried whole hominy (softer than corn), and brown-rice-meal (great for waffles), is Mexican made, especially for corn. A more expensive, easier to use "meal" grain mill is by Kitchen Aid, rated by the "Organic Gardening", Rodale Press as the best machined, best made grain mill.
A great video on buying a higher-end pressure-cooker. European-made, more recent ones, lack a top weight, they have interlocking handles and heavy-duty gaskets. But you can get a cheaper, older American made-one at a thrift store, but you have to have the detachable, therefore, lose-able Weight on top, don't buy without one.

This is way too much effort for freaking beans. If I want something that tastes like a potato, then I will simply eat a potato.

do you have any info on how that bean is less gassy? Can’t find any info online abut it really- The Mayo Gaba bean from mexico is supposed to cause less gas- but they are a southern bean- doubt they’d grow in north-=

Probably the low-gas beans either have less of the particular sugar that causes gas, or they contain an extra enzyme that makes that sugar more digestible.
My [All?] Instant Pot has a safety weight/pressure release. Doesn’t that go against the suggestion for high-end Euro-style?
OTOH, the manual PC can be placed in the sink under running water to “depressurize”.
If I’m in a hurry, I’ll put a wet sponge on the metal area of the IP lid, and cover the release with a wet paper towel before venting.
