2/3 cup of Sardinian fregula, Israeli couscous, or acini di pepe pasta
This is very close to my nonnie’s recipe. I have substituted both, just toast for a minute or two in a small amount of olive oil in a non stick pan. It helps give that toasted nutty flavor of the fregula.
1/4 cup finely grated pecorino Romano (about 2 ounces, optional).........
NOT optional in my humble opinion ;)
