Hi Jamestown! I tried two new recipes tonight and highly suggest them:
HERB BATTER BREAD
Ingredients:
3 cups all purpose flour
1 tsp salt
1 tbsp sugar
1 packet active dry yeast
1 1/4 cups warm water
2 tbsp olive oil
3 tsp dried parsley
1/2 tsp dried rosemary
1/4 tsp dried thyme
Combine 2 cups flour, salt, sugar, and yeast in large bowl. Stir in the water, oil, and herbs. Use an electric beater for about a minute to mix. Stir in remaining flour and mix till smooth. NOTE: I used my hands at this point since the mix will be a bit thick/sticky. Scrape down sides of bowl, cover with a dish towel and let rise for 35-40 minutes.
Grease a 9x5 loaf pan. Stir down batter with hands to expel air. Scrape batter into greased pan and pat down with floured hands. Cover pan and let rise 30 minutes. Bake in a preheated 375 degree oven for 40-45 minutes. Remove from pan and cool on wire rack.
FORGOTTEN JAMBALAYA
1 can (14.5 oz) diced tomatoes
14.5 oz of chicken or beef broth
6 oz tomato paste
3 celery ribs
2 green peppers, chopped
1 medium onion, chopped
5 garlic cloves
3 tsp dried parsley flakes
2tsp dried basil
1 1/2 tsp dried oregano
1 1/4 tsp salt
1/2 tsp cayenne
1/2 tsp hot pepper sauce
1 lb. boneless chicken breasts, cut into 1 inch cubes
1 lb smoked sausage, cut into 1/4 inch slices
1/2 lb medium shrimp
Hot cooked rice
DIRECTIONS
Throw it all (except the rice) into crock pot, stir, put on low and forget it for 4-6 hours. When chicken is not pink and it has all married well, put in the shrimp for 15-30 minutes. Add more spice at any time if you like it HOT.
I wonder how it would be alternating layers of lasagna and perogis.
Golden Chicken and Autumn Vegetables
4 Bone-in chicken breast halves or 6 thighs
1 Cup chicken broth
1 Tbsp chopped fresh parsley
1/2 tsp garlic powder
1/2 tsp dried rosemary, crushed
1/4 tsp dried thyme
2 Large sweet potatoes, peeled and med-large chunked
9-12 oz frozen or 2 cups fresh whole green beans
In a nonstick skillet over medium-high heat, cook chicken until browned on both sides. Add broth, parsley, garlic powder, rosemary, thyme, potatoes and beans. Bring to a boil. Cover and cook over low heat for 20 minutes or until done.
‘Stick to ribs’ generally means crockpot to me...
Slow-Cooker Bacon-Ranch Chicken and Pasta
Ingredients
1 lb chicken breasts
6 slices bacon, cooked and diced
2 to 3 cloves garlic, finely chopped
1 package (1 oz) ranch dressing and seasoning mix
1 can (10.75 oz) condensed cream of chicken soup
1 cup sour cream
1/2 teaspoon pepper
1/2 cup water
8 oz spaghetti, cooked
Directions
Spray 4-quart slow cooker with cooking spray; place chicken breasts in cooker.
In medium bowl, mix remaining ingredients except spaghetti. Pour over top of chicken.
Cover; cook on Low heat setting 6 hours or on High heat setting 3 to 4 hours.
When about 15 minutes are left, cook and drain spaghetti as directed on package.
Just before serving, shred chicken with 2 forks, and toss creamy chicken mixture with cooked spaghetti.
So I will resort to Reames. And it's for the crockpot but I have the original model and don't know if 3-1/2 quart capacity is big enough plus my indicator light doesn't work but it still works on high because I made some of my version of copycat Maidrites in it, set on high, cooked it dry but Maidrites were yummy and my family couldn't tell the difference; if anything, better.
Chicken and noodles, will probably tweak it a little and don't like shredded meat.

There are a few versions which are almost the same on youtube. They use 4 chicken breasts and I can only find pkgs of 3 which might not matter. Plus I wonder if I could combine it with some thighs.
And I'm eating it with some instant mashed potatoes, horror of horrors. Something green for veggie/salad.
My sister made her own with whip cream, butter and parm, don't know what else. These look pretty good, some are on sale. Ragu Cheesy is 2/$3, couple others on sale, Barilla Creamy $2.48 and Classico Creamy 2/$4? Or should I try a couple different ones, nice to have a jar on hand.
I guess I have to make the ravioli recipe or buy Fettucini noodles and shouldn't use Reames, right?

Each year, my brother brings me a gift of thick cut cold smoked pork chops. I make this dish for him. I have also used regular thick cut chops-also very good:
That casserole looks good - I am looking for ways to incorporate a little spinach into meals.
I have a homemade hamburger helper mix recipe:
1 1/8 Cup Powdered Milk
1/2 Cup + 1/2 Tablespoon Cornstarch
3 1/2 tsp minced onion
1 heaping tsp garlic
1 heaping tablespoon dried parsley
1 1/2 heaping tsp. each Basil, Thyme, Black Pepper
Store in Mason Jar to use as needed.
Use 1/4 cup of mix for 1/2 lb. hamburger. Vary the spices according to what you want. This will make 4 meals/recipes for 2-3 people.
For Example:
Chili Tomato Mac:
After browning the Hamburger, Add 1 can tomatoes, 1/2 - 3/4 Cup macaroni, 1 1/2 Tbls Chili powder 1 tsp Paprika, 1/4 tsp sugar, salt or beef bullion to taste.
Once the pot is simmering nicely, combine 1/4 cup of mix with 1/2 cup water with a whisk to get it well combined and then whisk it into the skillet.
This takes about 12 minutes to cook, once you get the ingredients into the skillet, after the meat is browned.
This is half a recipe for both the mix and the meals, now that it’s just the two of us.
Another flavor:
Stroganoff:
1/2 lb. Hamburger
1 cup egg noodles
1 cup water
1/4 cup mix
1/4 cup sour cream
Salt or beef bullion to taste.
Cook and drain hamburger, then combine all except sour cream. Simmer 20 minutes till noodles are done.
Now, I don’t keep egg noodles around from the store any more, because they go bad before I use them - due to carb content and smaller family size. So when I want egg noodles for something, I just make my own. Half a recipe below:
1 cup flour
1/2 tsp salt
1 egg
Milk as needed (1-2 Tbls)
Combine flour and salt. Make a well and add the egg and milk. Begin whisking the egg until it’s mixed with the milk and then gradually incorporate flour till you have a stiff dough to knead. Knead it for about 5 minutes. Let the dough rest covered with damp cloth for 30 minutes. Some people like to oil the dough and then let it rest.
Roll the dough out and cut strips with a pizza cutting wheel. Spread out or hang to let dry for 2 hrs. Use the dehydrator if desired to get it drier still.
Hint: a cutting board covered with a “flour sack” towel and sprinkled with a bit of flour then smoothed out with your hand is the best thing to use to roll out dough!

I makeup batches of this soup and freeze it. I will serve it with a no-knead kind of bread when I am in the mood for making it.
There is a great recipe database from SF Gate-they used to have the best recipe section of any newspaper. Alas, it went away, as did most newspaper food sections. I see the New York Times wants $5 a month now to see these recipe data base.
I like to make this autumn panzanella and serve with a simple grilled chicken.

The Boston butt is finishing in the oven, finally. It spent about two days marinating and all day today in the smoker.
Here is a recipe I just got for
Biscuits
A visiting Priest was attending a mens breakfast

Just as the Priest was ready to stand and stop every-
thing, the farmer continued,
But Lord, when you mix em all together and bake em
up, I do love fresh biscuits. So Lord, when things come
up we dont like, when life gets hard, when we just dont
understand what you are sayin’ to us, we just need to re-
lax and wait till You are done mixin, and probably it will
be somethin’ even better than biscuits.
