There are over 38,000 Mexican restaurants across the United States. Mexican food is the most popular international cuisine in the U.S., representing 42% of all ethnic food sales. Its represented on the menus of one in every 10 restaurants in the United States. With so many Mexican restaurants to choose from, the real question becomes how to spot authentic Mexican food.

A lot of this information is wrong, the person doesn’t realize that Mexico is made up of many states and cities with their own way of doing things.
The way you are served up food varies a great deal.
This is a person whose knowledge is limited to one of the Mexico border cities.
For instance, in one city, they serve their only flour tortillas on tacos with red radishes for a topping.

I was once told by a chef at a Mexican restaurant (who was part-Mexican by ancestry), that an authentic Mexican restaurant will not say that its food is “Mexican,” but will rather identify a particular state: Puebla, Oaxaca, Michoacan, etc.

Tortillas de maíz pequeños con asada o puerco o lengua o cerebro con un poco de cebollas y cilantro. Nada mas.
Translated: Small, corn tortillas with beef or pork or tongue or brains with a little onions and cilantro. Nothing more.
Real Mexican tacos don't come with lettuce, tomatoes or cheese. Adding those makes it the American version.

Near Yuma. Park on the reservation in California on Winterhaven/Algodones road, walk through the border and you’re there. Lots of street vendors selling all kinds of stuff, and taco stands everywhere. 50 miles from the Sea of Cortez, so the shrimp are fresh. Had brekky at an amazing sit-down restaurant in a garage! The food was great, portions very good, and I fed 2 people for under $10!
