Have You Gone Gluten-Free?
Santa Cruz Good Times ^ | WEDNESDAY, 15 JULY 2015 | Matthew Cole Scott

Posted on 07/22/2015 12:48:28 PM PDT by nickcarraway

I’m hardcore, I don’t do any gluten, processed oils or processed sugars. I survived 10 metastasized bone cancers, and realized that it all starts with the sugar, gluten and complex carbohydrates.
Tim Blake, Santa Cruz, Emerald Cup Producer

I’m not gluten-free because I’m not celiac. I think it’s just kind of a fad diet.
Kelsey Kraus, Santa Cruz, Grad Student

I am not gluten-free. However, I focus on a vegan raw diet so that really limits my intake.
Bill Gibson, Santa Cruz, Sales

No. Because I love carbs.
Ali Kearney, Santa Cruz, Fisheries Observer

I do my best to be gluten-free, because when I don’t my joints hurt.
Iris Kavanagh, Santa Cruz, Consultant

This is a "man on the street," feature of this publication I didn't post it because of the gluten free thing, but because of this man who survived ten metastasized bone cancers. If that is on the level, hats of to him. That's amazing, and he's obviously a fighter.

I buy my gluten separately at the health food store to make my bread rise.

Yes rice! I am mostly gluten free because I have realized that when I eat wheat, it causes a problem in my gut. I have had the blood test for celiac and I don’t have it, but wheat is still not good in my system.

If the bone mets were from prostate cancer, then he's better off eliminating animal protein from his diet than gluten.

Research is key, and the jury is out on gluten, except for Crohn's Disease victims.

Someone very close to me died of celiac so I take the gluten thing very seriously. He might be alive today if we had had it diagnosed earlier. A doctor told me a few years ago that it was tough to diagnose - or that doctor’s don’t look for it. But, really, a gluten-free diet in a perfectly healthy person is absurd.

I suspect he likely does have prostate cancer, as that variety is slow growing, like to settle in bones and is responsive to hormone therapies.

I have read that while very few people have Celiac or true gluten intolerance, nearly everyone has a little bit of a problem with gluten.

I don't know how true that is.

I’ve been mostly gluten free for 2 years; I lost a lot of weight and now have normal BP.

“jury is out on gluten”

The jury has spoken in my case. I have to avoid gluten. I’ve tested the “gluten intolerance is psychosomatic, fad, [insert term here]”

I have personally researched the topic over many years, by ignoring repeated digestive evidence to the contrary, with very unpleasant and unhealthy result. However, I have found that there are pills that, for me, allow very limited intake with to able side effects.

It’s pretty easy to be gluten free these days. It costs a little more but it’s a lot easier than it used to be.

What is a gluten? And why do IGAS? I’m gonna die anyways?

What is a gluten? And why do IGAS? I’m gonna die anyways?

It is in wheat, an adhesive like substance.

Gluten is an artifact of the agriculture revolution of the 1970s, when they figured out how to grow more dense crops using new wheat varieties (not GMO yet).

Prior to that, there was less gluten in our diet. Hence the concern.

Plus more bagels and pizza in our diet. Growing up, bread was thin slices for a lunch sandwich. Not eaten at breakfast or dinner.
