What are you making for Easter Dinner?

Every year we go to my husband's aunts house. Lately, I am lazy and we unexpectedly have a new dog. So, we are staying home and hopefully we can make a picnic in the backyard. It has been a long time since I started a foodie thread, so what are your plans/recipes for Easter dinner?

homemade mac ‘n cheese
spring salad (with strawberries)
deviled eggs.

Lamb cake

We have 2 new puppies. Were we crazy of what? LOL Thought we would get the housebreaking and chewing over at once, dumb us.

“Lazy Lobster Sunday” at a local highfalutin’ restaurant. The lobster is out of the shell, perfect for us “lazy” lobster fans!

We are going to daughter’s house where her MIL and MIL’s mother are bringing food. Krisi is doing a ham to go with the turkey and I am bringing this....

Cantaloupe Fruit Salad

Ingredients:

* 2 ea Med. Cantaloupes *
* 1 ea Large Pineapple **
* 1 c Raisins
* 1 c Fresh Shredded Coconut
* 1 c Finely Chopped pecans
* 1 ea Large Apple ***
* Low-fat Yogurt

Directions:

* *Remove rind and seeds from cantaloupe.
* **Cored, Peeled, and cut into small chunks.
* ***Cored and cut into small chunks.
* Cut the cantaloupes into small chunks and mix with the pineapple, raisins, coconut, and walnuts in a large salad bowl.
* Scoop yogurt into individual serving bowls and pass the fruit salad. Stir to coat and enjoy. This dessert is wonderful on a hot day.

And here it is...

MARGO’S MARSHMALLOW DELITE...

1 16 oz tub Cool Whip

1 3.4 oz pkg of instant Pistachio Jell-O pudding

3 cups tiny marshmallows

1 20 oz can of crushed pineapple with juice

1 cup chopped walnuts

Turn lightly by hand

Chill and serve

Sorry to hear that tubebender. Family can be such a pain sometimes. They know all the buttons to push to drive you crazy in the shortest time possible. Too bad you’re on the other side of the world or you could come eat with us. :)

We are going over the inlaws, they have a cold Honey Bake ham, is not that good IMHO. So I’ll try to keep some food in the car. Ribs sound good to me.
