Weekly Roundup - Living On Nothing Edition Category: Roundups | Comments(15)

Did you hear about the guy that lives on nothing? No seriously, he lives on zero dollars a day. Meet Daniel Suelo, who lives in a cave outside Moab, Utah. Suelo has no mortgage, no car payment, no debt of any kind. He also has no home, no car, no television, and absolutely no “creature comforts.” But he does have a lot of creatures, as in the mice and bugs that scurry about the cave floor he’s called home for the last three years.

To us, Suelo probably sounds a little extreme. Actually, he probably sounds very extreme. After all, I suspect most of you reading this are doing so under the protection of some sort of man-made shelter, and with some amount of money on your person, and probably a few needs for money, too. And who doesn’t need money unless they have completely unplugged from the grid? Still, it’s an amusing story about a guy who rejects all forms of consumerism as we know it.

Recipe Hit List: 150+ Superbowl Party Recipes

Posted By TipNut On January 26, 2009 @ 1:01 pm In Recipes | 1 Comment

I usually publish weekly Recipe Hit Lists on Thursdays, but I’ve changed it this week since I know you’ll want time preparing your party menu and picking up food supplies for Sunday’s big game.

If you’re not into Superbowl, these are great party foods for any occasion and I’m sure there’ll be a recipe or two you’ll be bookmarking .

I’ve included a list of 101 simple appetizer recipes from the NY Times and a few other resources that list more than one recipe.

Also make sure to check out Tipnut’s Superbowl Dip Recipes & Snack Ideas [1] that was published for last year’s game day feast.
150+ Superbowl Party Recipes

1. BBQ Chipped Chop Ham Sandwiches – A Pittsburgh Super Bowl Recipe [2]: Since Pittsburgh is in the Super Bowl, I’ve got several recipes lined up that will win people over and provide a Pittsburgh Style celebration. This recipe is unsophisticated, but tried and true. This is the point. I’ve updated it a bit after playing around with the recipe. Recipe found at Accidental Hedonist.
2. Super Bowl Recipe: Hot Buffalo Wings [3]: Recipe found at Love My Philly.
3. Sweet and Sour Vietnamese Wings [4]: In today’s Cook the Book recipe, sweet and sour Vietnamese wings, chicken wings are marinated in an Asian all-stars concoction of fish sauce, mango nectar, ginger, lime juice, and lemongrass, before being oven-roasted to mahogany stickiness. The recipe makes 24 wings, which will serve 4 as an entrée, or, depending on the size of your game day spread, up to 12 as an appetizer. Recipe found at Serious Eats.
4. Super Bowl Pizza Party [5]: Homemade pizza is easy and fun to serve during a Super Bowl party. Before everyone arrives, mix up a big batch of dough (or better yet buy some from your local bakery or pizzeria), assemble your favorite toppings —various meats, cheeses, vegetables, fresh basil — whatever you like. When it’s time to eat, encourage everyone toss the dough high in the air like the pizza man does at the pizzeria before assembling their custom made pie and popping it in the oven. The easy part is your guests do the cooking. Recipe found at My Carolina Kitchen.
5. Fully Loaded Nachos & 17 other Super Bowl Recipes [6]: If taco bells nachos are dogfood than mine are 5 star Michelin rated…and they should be. I always like doing the usual wings and chili as well as Mexican eats when I’m having super bowl parties. It tastes good, everyone tends to like it unless your from Idaho and like Taco Bell and it cooks easy for large amounts of people. Many of the dishes work for buffet style foods and any parties of celebration. Recipe found at Smokin’ Chokin’ and Chowing With The King.
6. More Fun Superbowl Recipes [7]: Hot Pizza Dip, Stuffed Mushrooms. Recipes found at Living Life in the MUD.
7. Cajun Wings [8]: These Cajun flavored wings were easy to prepare, just marinade and bake in the oven. With 6 full ounces of hot sauce, the marinade sounds really spicy, but the wings had a nice kick that thankfully didn’t set my mouth on fire. We enjoyed them a lot and will make them again. Recipe found at Andrea’s Recipes.
8. 8 Easy Crock-Pot Recipes for Your Super Bowl Bash [9]: Don’t miss any of the action on game day. With these super-tasty recipes, you can toss the ingredients into one pot ahead of time, and you’ll be all set when your guests arrive. Recipes found at Delish.
9. Light and Scrumptious Spinach Artichoke Dip [10]: This is a lightened version that works great with light cheese, low-fat sour cream and reduced-fat mayonnaise. Processing it in the food processor contributes to its awesome texture. So, if you’re watching your weight right now and trying to keep your New Year’s resolutions, you can still enjoy this hot dip. Recipe found at Ingredients, Inc.
10. Tortilla Roll-ups [11]: The first thing to be devoured at our family-style New Year’s Eve party were these tasty tortilla roll-ups. Awesome as an appetizer, it is easy to tweak the ingredients to suit your preferences, use what you have on hand, or to make them more filling for a meal. One of my favorite things about tortilla roll-ups is that they are best made ahead of time, decreasing last-minute party preparations. Recipe found at The Finer Things In Life.
11. Fiesta Cream Cheese Spread Recipe [12]: Salsa and apricot preserves come together as a strange combination, yet create a very tasty appetizer! Give this one a try at your Super Bowl party this year! Recipe found at Taste of Home.
12. 101 Simple Appetizers in 20 Minutes or Less [13]: Recipes found at The New York Times.
13. Wings, 3 Ways, and Blue Cheese Dressing [14]: We all like a different sort of sauce so I decided to go ahead and make three different types since the prep is essentially the same. For the sticky wings I sauced them with my standard Asian sauce and then baked them. For the hot wings and the garlic-Parmesan wings I cooked them first and then tossed in the topping before serving. You could bake or fry these, I just had everything baking at the same time. When the sticky wings were done, I turned the broiler on the plain wings to crisp the skin up a little. Then tossed with the sauces I had prepped and served. Recipes found at Chaos In The Kitchen.
14. Baked Artichoke Dip Recipe [15]: A great do-ahead recipe – and you can bake it off in any sized dish you like. I should also note, the smell of the baking artichokes and toasting Parmesan provides a deliciously fragrant backdrop to any get together. I pop the artichoke dip into the oven roughly half an hour before we have friends over, just in time for its olfactory crescendo. Recipe found at 101 Cookbooks.
15. Cheesy Pepperoni Pizza Dip [16]: Children love this. Teenagers love it even more. Men really love this. Men, screaming at a football game, while drinking beer, especially love this. I love this. So I guess women love it too. Let’s face it, Superbowl Sunday is approaching with record speed. You know, the Superbowl, the day all your New Year’s diet resolutions are left in the dust. You need to set this Cheesy Pepperoni Pizza Dip right next to the buffalo wings and watch it disappear. I’m warning you, it’s addicting. The best part, it’s ready in minutes. No rocket science here, just a fun and yummy dip that will make your Superbowl Party the hottest ticket in town. It will. Really, it will. Recipe found at Noble Pig.
16. Buffalo Chicken Dip [17]: All the ingredients are cooked and just need to be warmed. It features both ranch AND blue cheese salad dressing. The recipe on which it is based calls for using canned chicken (no thank you, sir). And anything that includes a block of cream cheese puts us off a bit. So we’re the first to admit that this dish is a little trashy, but when we served it at party we were hosting last weekend, our guests went absolutely crazy for it. In fact, we made a huge dish of it, doubling the recipe below, and it was all promptly eaten, the dish nearly licked clean. Give it a try at your next soiree — you won’t be sorry. Recipe found at The Bitten Word.
17. Favorite Chili [18]: Last week I promised I would share my favorite chili recipe. Several years ago, I found this book: International Chili Society Official Chili Cookbook. I tried several recipes and liked Joe Burgoz’s Colorado Championship Chili the best, but I’ve made my own tweaks over the years (including the addition of chili powder!). Recipe found at Whisk.
18. Groovy Meatballs [19]: While I won’t be borrowing mom’s white patent leather belt, I have permanently adopted her Groovy Meatballs recipe. I often bring them along to potluck parties. Just keep an eye on these balls… they have a tendency to disappear quickly. Oh, and men especially love this dish — it’s perfect for Super Bowl parties or tailgate parties. Yeah baby! Recipe found at Lulu and Stuff.
19. Mexican Cheesecake [20]: Restaurant Quality- would make it again. “WOW! We had this at a football playoff party and it was super addicting. Everyone liked this appetizer the best. Completely delicious! Recipe found at Recipe Girl.
20. 30 Super Bowl Snacks [21]: When it’s time for the big game, don’t fumble! Step up your game and satisfy the hearty appetites of all those football fanatics gathered around the tube. We’ve made it easy: Choose from a plethora of chicken, chili, potatoes and pasta—all the best bar food. Come game time, we’re sure our picks will leave bellies content and all eyes on the field. Recipes found at Woman’s Day.

Cooking Timesaver: Make Ahead Herb Seasoning Salt

Posted By TipNut On March 23, 2009 @ 1:02 pm In Food Tips, Recipes | 2 Comments

Herb Seasoning Salt Tips & Recipe from pinkbites.com
How nice would it be to have a ready supply of crushed garlic, onions, herbs & seasonings at your fingertips, whipping up batches only once a year? Today’s feature is from Pink Bites with usage tips & a bulk recipe for Herb Seasoning Salt (Tempero Mineiro) [1]:

Helpful Notes:

* Use the seasoning in soups, stews, rice, beans, meats, just about anything.
* You will need to use very little to season your foods, a little really goes a long way.
* Just heat a little olive oil or vegetable oil, add the amount of seasoning desired and cook for a quick minute before proceeding with the remaining ingredients.
* You can use this seasoning mix when a recipe calls for cooking chopped onions and garlic.
* When using this mix on a dish, adjust the salt at the end because the seasoning is already quite salty.

The idea is to make a large batch of your own signature seasoning filled with favorites like garlic, onion, fresh herbs and use it as the seasoning base in your cooking. With this base, you can skip chopping onions and crushing fresh garlic [2] when preparing dishes and just grab a jar out of the fridge of your own personal blend. Keep one jar in the fridge and pop the rest in the freezer until you need them.

There’s a recipe (that you can easily adjust to your own taste preference) along with tips, please visit the site above for all the details.

Recipe Hit List: Homemade Granola Recipes

Posted By TipNut On April 16, 2009 @ 1:02 pm In Recipes | No Comments

Homemade Granola Recipe By thekitchensinkrecipes.com
Looking for a healthy and satisfying treat to snack on when it’s munchy time? Or how about replacing blah and boring commercial cereals with some wholesome, crunchy goodness? Here are 19 recipes I’ve found around the ‘net for homemade granola (and granola bars too)–each look delicious!

19 Homemade Granola & Granola Bar Recipes
*Note: Descriptions below are quotes from the recipe sites

1. Granola [1]: (As seen in picture) I’ve tried several different recipes, which—generally speaking—all contain some combination of oats (and sometimes coconut, wheat germ or bran); mixed nuts, fruits and seeds; at least one sweetener (sugar, honey, maple syrup); flavorings (like cinnamon or vanilla) and at least one fat (typically, a neutral vegetable oil like canola). Once I realized that the recipes were basically variations of the same theme, I created a recipe of my own that I adore. Recipe found at The Kitchen Sink Recipes.
2. Low Fat Granola With Millet [2]: But despite my granola cred, I’ve never added millet. And dear readers, millet is a granola god-send! It adds such a snap, crackle, pop for the perfect bite of crunch. As for the no-oil, I couldn’t detect much difference between this one and my normal granola, so why not choose the low fat version instead? It’s delicious, filling and healthy breakfast and if you prepare a batch every Sunday evening then you have something to look forward to all week long. Recipe found at Everybody Likes Sandwiches.
3. Uncle Austin’s Granola [3]: So here is Uncle Austin’s granola recipe. Of course, it won’t taste just like his because recipes never do. But don’t worry, you’ll make it your own by adding your own passion and something special. And in the meantime, when my batch this year runs out, this will tide me over until next Christmas when Austin will bestow upon us his grand, grand granola. Recipe found at Homesick Texan.
4. Sunflower Apple Granola with Honey [4]: Recipe from Coffee & Vanilla.
5. A Granola Recipe From My Mom’s Hippie Youth [5]: This much-coveted recipe is after the jump. It is delicious eaten with yogurt, given away as gifts and eaten as a before-bed snack, right out of the jar or bag in which you are storing it. Recipe found at Slash Food.
6. Homemade Banana Chocolate Granola Bars [6]: Honestly, I always thought granola bars would be a bit of a pain in the — um, yeah — to make. But they’re really not. It took me under 30 minutes start to finish and the hardest part was chopping the cashews (and washing the dishes). Simply toast some nuts, boil some syrup, mix everything together in a big bowl and pour them into a baking dish. They’re just as easy as rice krispy treats, only infinitely more healthful and satisfying. Recipe from Bitchincamero.
7. Fruit Granola Bars [7]: I have tried a lot of granola bars over the years and homemade or store bought, these are the best I have ever had! It’s mostly Ina Garten’s recipe from the barefoot contessa back to basics cookbook. It’s my #1 cookbook right now. If you like her and don’t have this book already, go get it! So many amazing recipes! But, in typical fashion as I always do, I modified it a little bit. I substituted raisins for the dates and added cinnamon chips. I think the cinnamon chips are what really made them. There is the hint of cinnamon in the granola and it sweetened them up just enough. Oh, so good! Recipe found at Satisfying My Sweet Tooth.
8. Homemade Granola [8]: It is far cheaper than what you can buy at Tall Grass, or any store, and it will ruin you for boxed cereals. The dimensions of flavor when you make your own granola is explosive. And the effort involved? About 10 minutes of hands-on time and 20 minutes in the oven. Recipe from Half Assed Kitchen.
9. Easy Homemade Granola [9]: It’s a simple enough granola: oats, cinnamon, honey, brown sugar cook together and then nuts are added (almonds and hazelnuts) and, at the end, golden raisins and dried cherries (I didn’t have dried cherries, but I wished I did: I love them.) Still, somehow the balance of all the elements yielded just the granola I was craving; it’s sweet, but not overbearing, and it feels more naughty than it actually is. Recipe found at The Amateur Gourmet.
10. Homemade Granola Recipe [10]: I was especially fond of the result after the granola was soaked in soy milk for about half an hour. It might not make sense to soften the granola after all the stirring to make it extra crispy in the oven, but the soaking process tints the soymilk (a wonderful teak color) and lends a delicious smoky flavor. Just yum! Recipe found at Cafe Fernando.
11. Dorothy’s Tombstone Granola Recipe [11]: This recipe is sooooo forgiving: you can just use whole oats although it is more interesting with a variety of flakes. But you can go with one nut or several, one dried fruit or several. Just keep the basic proportions the same. Enjoy. Recipe found at Just Keep The Dish.
12. Homemade Energy Bars [12]: A simple and healthy bar works miracles when the energy’s anywhere but there. Or at least, it will have to do until we can afford that 3-month long vacation in tahini Tahiti. Substitute your favorite nuts and dried fruits for the ones listed here: I’ve tried several variations and have yet to be disappointed. Couple extra bonuses? The bars freeze really well. And they’re gluten-free, too. Recipe found at Have Cake, Will Travel.
13. Homemade Granola Recipe [13]: The result is a wonderfully crisp textured cereal with just the right amount of sweetness. You can eat this as you would any other dry cereal, with cold milk, or it is also great as a snack food. Recipe found at Joy Of Baking.
14. Chewy Cherry Almond Granola Bars [14]: These are a great energy-boosting snack. Healthy, nutritious, and easily customized. Recipe from At The Baker’s Bench.
15. Homemade Granola Bar Recipe [15]: (No high fructose corn syrup in these bars!) After reading tons of granola bar recipes (and throwing out the ones that sounded like disguised candy), I came up with my own mixture that works deliciously well to create healthful, filling granola bars. If I eat half of one of these and a small piece of fruit, I’m good to go for several hours. And it makes me happy knowing that I didn’t eat anything disgusting to feel full. Recipe found at Joyful Abode.
16. Homemade Granola Bars [16]: Every bite tastes delightfully different, depending on the particular combination of the various little goodies in each piece. This is a huge double batch, so it makes enough for two people to have at least one granola bar every day for two weeks. Recipe found at Fancy Toast.
17. Almond Vanilla Granola [17]: I played with various recipes and came up with my own that my family really enjoys. Granola is a super easy thing to make and the great thing is that there is no “right” way to make it. You can play around till you find whatever way makes you happy. Once you find out how simple it is to fill a container with your own, delicious, nutritious, additive-free granola, there will be no going back to the dark side of paying retail again! Recipe found at Cookie Baker Lynn.
18. The Northwest’s Best Granola [18]: All right … here it is … the most amazing homemade and good for you granola recipe ever put down on paper. Or so at least I think, and I’ve tried a lot of them. The fantastic thing about the recipe is that it can be tailored to your liking or whatever you might have on hand … walnuts or pecans … dried cranberries or raisins … apple juice or orange juice … you name it. Recipe from Six In The Northwest.
19. Nutty Granola [19]: I made a few minor adjustments…I left out the cinnamon, only because I didn’t have any, and added some vanilla. I also subbed raw cashews for walnuts because they are what I had on hand. My kitchen smelled so good this afternoon. Even my son came in and said “Mom, what is that yummy smell?” So good mommy spooned some fresh granola into a small bowl and said “Snack.” So we snacked. Recipe found at Aggie’s Kitchen.

Newspaper Fish Recipe

Posted By TipNut On August 14, 2007 @ 9:08 am In Food, Recipes | 1 Comment

Here’s another campfire favorite that can also be done on the BBQ. Doesn’t everything seem to taste better when cooked outdoors ? Here’s how to cook fish in wet newspaper:

Newspaper Fish Recipe

Ingredients & Items Needed:

Fresh Fish
Seasonings
Newspaper – soaked in water

Directions:

* Gut and clean the fish then season the inside (you can also brush a light layer of oil on the outside if you like). Roll up the fish tightly in a couple sheets of wet newspaper.
* Place the wrapped fish directly on hot coals of a small campfire or on a hot grill. Cook for approximately 10 minutes on each side.
* Remove from heat and open the fish package, many times the skin will peel off with the newspaper.
* Cooking times will vary with the type and size of fish being cooked as well as how hot the heat is.

Tips:

* Keep the head and tail on the fish if you like. Use at least 2 sheets of newspaper when wrapping each fish.
* If you don’t like the idea of cooking the fish in direct contact with the newspaper, wrap the fish in a wet paper bag first.
* If you prefer, you can wrap the fish in dry sheets of newspaper (tightly), and give it a good dunk in a pail of fresh water.
* Watch that the newspaper doesn’t get too dry and start on fire before the fish is done. Remove from heat before this happens, spray some more water on it and wrap another layer of wet newspaper. Return to the fire and finish cooking.

Seasoning Ideas

Depends on the type of fish being cooked, but some tasty suggestions:

* Lemon Pepper
* Onions, Cilantro, Salt & Pepper
* Lemon Slices (or wedges), Salt & Pepper
* Lemon Slices, Fresh Dill
* Lemon Slices, Rosemary
* Creole Seasoning

Gee, after reading the following, I better take a low family profile... LOL

Cash for Seniors

By Neil Braithwaite Tuesday, August 4, 2009

-Satire-<<<<<<<<<<<<<<<<<<<<

Tired of visiting the retirement home when you could have been out playing golf? How about all those long hours spent in the doctor’s waiting room when you could have been getting things done at home, or spending all your hard earned vacation money to pay for up-fitting your spare room to meet an elderly parent’s needs?

Thanks to President Obama, those are worries of the past!

The “Cash for Clunkers” program was such a success that the Obama administration is planning a new health care supplemental program called, “Cash for Seniors.”

The Cash for Seniors program will allow individuals and families to get out from under the staggering costs and burden of taking care of an elderly relative.

The program will give an initial tax credit of $10,000 for every qualified senior remitted to the government, as well as a $2,500 tax credit for every year thereafter that the senior is alive. There is a limit of four senior credits per household.

To qualify for the Cash for Seniors program, the prospective senior must be an immediate relative, currently live in or near the United States, have a legal social security number, breath on their own, be 90% coherent and have been insured for the past two years.

Qualified participants and seniors will relinquish all familial, financial and inheritance rights to the federal government. Seniors will be housed in one of our state of the art government senior centers throughout the United States and Puerto Rico.

The Cash for Seniors program is designed with several goals in mind. The program will stimulate an ailing economy by putting money back into the pockets of hard working Americans through increased productivity by allowing formerly time-strapped caregivers the ability to maintain full-time work and finally enjoy quality leisure time again. The program will also reduce health care costs by putting seniors on a fully funded government “end of life” managed care program that not only gives them a better quality of life, but immediate relief from unappreciative family caregivers. This much-needed program gives both caregivers and seniors the peace and dignity they truly deserve.

So grab granny and gramps and that crazy old aunt you have been so inconvenienced with all these years and head on down to the government center to see if they qualify. Or just log onto http://www.cashforseniors.gov and apply online.

Either way, you’ll be glad you did.

NOTE: SATIRE!!!

5 Homemade Garlic Syrup Recipes

Posted By TipNut On December 18, 2006 @ 7:22 am In Beauty & Health, Food, Food Tips, Recipes | No Comments

Garlic is eaten regularly by many for a variety of reasons, they believe garlic helps reduce cholesterol, fights coughs, colds and infections, ridding worms (!), calms the hysterical, cancer prevention, asthma treatments and respiratory ailments, vampire protection as well as develops courage if you’re a Roman Gladiator (hehe). And many more.

Instead of eating raw cloves of garlic, some prefer taking Garlic Syrup daily. This stuff can get pretty pricey to buy in the herbal/natural remedy stores, so for DIY’ers and frugalites, here are several different ways you can make your own Garlic Syrup.
Homemade Garlic Syrup Recipes

Recipe #1

1 pint water (boiling hot)
3/4 cup honey
2 ounces garlic cloves
1 TBS white vinegar

Directions:

* Peel and crush garlic and put in sterile glass jar.
* Pour hot boiling water over the garlic.
* Refrigerate overnight. The next day strain the water and add the vinegar and honey to water.
* Refrigerate and take up to 1 TBS three times daily.

Recipe #2

3 bulbs garlic (peeled)
2 cups water
1 cup cider vinegar
1/4 cup honey

Directions:

* Add garlic and water to a non-aluminum saucepan and simmer until the water reduces to 1 cup (garlic should now be soft).
* Remove garlic and place in a sterile jar or airtight container.
* Add both the honey and the cider vinegar to the water in the saucepan and boil until syrupy. Pour over garlic, seal and refrigerate overnight.
* Refrigerate and take up to one teaspoon daily.

Recipe #3

4 bulbs garlic (approximately 50 cloves)
1 quart apple cider vinegar

Directions:

* Peel and chop garlic. Place in a sterilized quart jar, cover with vinegar.
* Refrigerate.
* Shake jar daily.
* Take 1 tablespoon up to 3 times a day (adult). Sweeten as you like if needed.

Recipe #4

8 ounces garlic (peeled & minced)
Olive oil

Directions:

* Put garlic in a sterile jar and cover with olive oil. Seal and refrigerate. Strain and use as needed–1 teaspoon per.

*Olive oil is also purported to help with cholesterol

Recipe #5

1 pound garlic cloves (peeled and crushed)
apple cider vinegar
distilled water
1 cup glycerine
1 cup honey

Directions:

* Add garlic cloves to a sterilized 2 quart jar. Fill jar 3/4 full with equal parts vinegar & water. Seal and refrigerate for 4 days, shaking jar 3 times daily.
* After four days, add the glycerine and shake well to mix thoroughly. Set aside another day, shaking 3 times throughout the day.
* The next day strain through cheesecloth to remove all garlic. Return mixture to jar and add the honey, mix well.
* Store in refrigerator.

Make sure you have bunches of fresh parsley on hand to chew regularly if you use this, your breath will be nasty. Cases of breath mints too. Your family will thank you .
Important

It’s always a good idea to run home or herbal remedies by a doctor first. You never know if an ingredient can conflict with current medications or health issues.

Added: I happened across an article about garlic and oil, it should be refrigerated and consumed within a week [1] to prevent danger of botulism. Another article discusses adding acidity to the oil as well (such as vinegar): Preservation of vegetables in oil and vinegar [2].

Darken Gravy Tricks & Gravy Enhancer Recipes

Posted By TipNut On December 11, 2006 @ 7:42 am In Cooking Tips, Recipes | 2 Comments

How to Darken Gravy:

Last minute “in a pinch” fixes…

* Instant Coffee Granules
* Soy Sauce
* Dark Molasses
* Cocoa
* Worcestershire Sauce
* Gravy Enhancers like Kitchen Bouquet, Gravy Master

Recipes for Prepare Ahead Homemade Gravy Enhancers:

Kitchen Bouquet Copycat Recipe

Ingredients:

1/2 cup brown sugar
2 cups water

Directions:

* Cook brown sugar slowly in a pan on stovetop till it burns, stir slowly throughout entire cooking process.
* Once the brown sugar turns dark brown in color, add the water. Bring to a boil, stir well.
* Remove from heat after sugar is near black in color.
* Once cooled, seal in sterilized jars or small bottles. Use as needed, normally just a few drops at a time will do the trick.

1 cup firmly packed brown sugar
2 TBS water
1 cup boiling water

Directions:

* Cook brown sugar and the 2 tablespoons water over medium heat until sugar dissolves.

* In a large nonstick saucepan or frypan, cook sugar over medium-high heat. Shake pan frequently until most of the sugar is syrup, approximately 10 minutes.
* Reduce to medium heat and continue swirling the syrup until all sugar is dissolved. After 3 to 5 minutes the color should be a deep, rich amber.
* Pour hot syrup into the foil lined pan, spreading into a thin layer. Be very careful, it’s HOT! Set aside to cool for at least 30 minutes.
* Once completely cool, lift caramel out of pan and remove foil. Break caramel into chunks.
* Using a food processor, grind chunks down into a powder.
* Store in an airtight container.
* Add to gravies as needed for darkening

You can also cook your spices in with the syrups and roasted flour if you’d like, or simply add at the time you are preparing your gravy (preferred method).

When making gravy with roux:

Brown roux to the colour that you want your gravy to be, the roasted flour (recipe above) helps achieve the color more quickly.
